Responsibilities: 

Check the quality of the ingredients. Verifying and documenting daily weight and lengths for water wheels. Document daily production – how much is actually being produced in a day versus planned. Time studies. Help with organization of materials.  

Work Instructions: 

Help with pre-op inspection in cut room  

• Pre-op in the morning - Checking that all contact and non-contact surfaces are clean and ready for production 
• Anything that needs recleaned needs to be rejected on morning sheet and the surface must be washed, rinsed, sanitized and inspected before use  
• As employees enter the rooms all throughout the day make sure that they are washing their hands and sanitizing their boots 
• Quality of ingredients - Checking meat being opened 
• Meat being opened that comes with liners – ensuring the liner and bags are completely removed   
• Buggies are properly labeled of what is in them, the correct lot # and what they are going to be used for 
• Quality during production -Checking weights & lengths  
• Verify and document material being run – what dye is being ran  
• Verify & document 2 weights per cart and 2 lengths per cart every 30 min  
• Verify any production deviations on raw lot cards – any changes in ingredients, dyes, run wt., etc.  
• Time studies  
• Document how much per machine is being run per hour  
• Ex. At 9am mixer has completed 5 out of 15 batches of WS 
• Water wheel – 9am completed 10 of 18 batches 
• Check sanitation & GMPs throughout the day   
• If someone touches their hair nets, beard nets, or face they are to wash and sanitize their gloves  
• Boots are being cleaned  
• Coats and aprons are in good condition 
• Paddles and shovels are in good condition 
• End of day  
• Ensure any batches that didn’t get ran are documented and labeled accordingly  
• All scrap weight is weighed and documented  
• Verify that machines that are being torn down are locked out  
• All meat is organized for next day's production in the coolers, and nothing is left out in the cut room
