Job Details: Job Location: Loleta, CA 95551, Position Type: Full Time, Education Level: Not Specified, Travel Percentage: None, Job Shift: Any, Job Category: Restaurant - Food Service, Tribal Preference will be given in accordance with BRBRR Act Relating to Employment POSITION SUMMARY: Line Cook II is responsible for preparing all menu items to specified standards while addressing customer’s needs and requests. They are required to adhere to all cleanliness and safety standards, can set up and breakdown the line, maintain assigned daily prep levels, and can assist in food functions/parties and events. Line cooks II is responsible for the kitchen when a supervisor is not present and acts as the lead for all line cooks. ESSENTIAL DUTIES AND RESPONSIBILITIES Prepares all menu items to specified standards while addressing customer’s needs. Adheres to all safety and cleanliness standards of OSHA, and other established government guidelines. Follows and completes all checklist and other daily tasks. Stocks all stations and cooks line to specified levels for maximum production. Clean station and equipment daily to maintain sanitation standards. Acts as a lead position for kitchen staff and will be person in charge if no supervisor is available. In depth knowledge of restaurant best practices and cooking methods. Ability to stand for longer than 8 hours Ability to lift fifty pounds (50 lb.) Other duties may be assigned. AUTHORITY/SUPERVISORY RESPONSIBILITIES Act as mentors to Line Cooks and other kitchen staff. QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. EDUCATION/EXPERIENCE: High School Diploma or equivalent and some college preferred. Minimum four (4) years of full service line cooking experience with a minimum six (6) years of overall Food and Beverage experience. Supervisory experience preferred. CERTIFICATES, LICENSES, REGISTRATIONS: Must provide or obtain a Food Handlers certification upon hire and maintain during employment. COMPUTER OPERATIONS Proficient personal computer skills including electronic mail, record keeping, routine database activity, word processing, spreadsheet, graphics, etc. LANGUAGE SKILLS: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization. MATHEMATICAL SKILLS: Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs. REASONING ABILITY: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. OTHER SKILLS AND ABILITIES: Ability to operate standard office equipment (copier, fax, etc.). Must be able to work with American Indian people and be sensitive to their culture. Comply with all safety policies, practices and procedures. Report all unsafe activities to supervisor and/or Human Resources. Participate in proactive team efforts of Bear River Casino Resort. Provide leadership to others through example and sharing of knowledge/skill. Must be able to work all shifts, weekends, holidays & special events as needed. Must have extensive knowledge of all line positions including broiler, sauté, pantry and banquets. Ability to operate all cooking equipment. Must be able to perform short order cooking of burgers, steaks, sandwiches, fries etc. Knowledge of sautéing, broiling, steaming, and baking is preferred. Must have a professional and friendly attitude towards customers and coworkers.
