ABOUT THE OPPORTUNITY

You don’t have to come to us as an experienced pitmaster. We can teach BBQ.

This is a hands-on BBQ production and leadership position working directly with our Pitmaster. You’ll learn and execute Good BBQ Company’s methods for producing brisket, pulled pork, turkey, ribs, sausage, and other smoked meats while helping maintain our standards for food quality, food safety, cleanliness, consistency, and service.

WHAT YOU’LL DO

• Execute or oversee assigned production of brisket, pulled pork, turkey, ribs, sausage, and other smoked meats according to Good BBQ Company production plans, recipes, and procedures.

• Learn to manage fires, smoker temperatures, smoke quality, food temperatures, wrapping, tenderness, holding, and other critical points throughout the cooking process.

• Receive and act on production handoffs from the Pitmaster, including quantities, temperatures, cook status, required checks, prep needs, waste, transfers, and any unusual conditions.

• Maintain accurate food-production, inventory, waste, and transfer records.

• Cut meats and assist with customer orders while maintaining Good BBQ Company’s portion-control and product-quality standards.

• Keep smokers, pit tools, production equipment, and assigned work areas clean, organized, and serviceable.

• Assist with receiving, storage, preparation, cooling, packaging, holding, and reheating/rethermalization procedures as trained.

• Coordinate with other managers to ensure product is available when needed for daily service, catering, and other business needs.

• Promptly identify and report food-safety concerns, refrigeration problems, equipment failures, product-quality issues, unusual waste, and inventory discrepancies.

• Complete assigned opening, closing, sanitation, security, and other shift responsibilities.

• Lead and direct employees when specifically designated as the shift leader.

• Step outside normal pit responsibilities when necessary to support the restaurant during high-volume periods, staffing shortages, emergencies, catering events, or other operational needs.

WHAT WE’RE LOOKING FOR

Previous BBQ, restaurant, kitchen, food-service, or leadership experience is helpful, but it is not required. We are willing to train the right person.

More importantly, we’re looking for someone who is:

• A Team Player — Willing to help with meat cutting, service, cleaning, receiving, catering, and other restaurant needs.

• Comfortable With Responsibility — Able to work independently after training and eventually lead other employees when assigned.

• Eager to Learn — Interested in developing real Texas BBQ skills, including fire management and the production of brisket, ribs, pork, turkey, sausage, and other meats.

LEADERSHIP & REPORTING

The Pit Manager reports directly to the location Pitmaster and is primarily responsible for pit and meat-production operations.

The Pit Manager is not automatically the manager in charge of every shift. Another manager may be designated to lead the overall restaurant shift. In those situations, the Pit Manager remains responsible for pit and meat-production duties while supporting the designated shift leader.

When specifically assigned as shift lead, the Pit Manager may direct employees as necessary to maintain safe and effective restaurant operations.

Good BBQ Company operates with a collaborative management model. Our managers are expected to help outside their primary areas when the needs of the restaurant require it.

CERTIFICATION

The Pit Manager must maintain a valid Certified Food Manager credential recognized by the State of Texas and any other certification required by applicable law or Good BBQ Company policy.

If you don’t currently hold the required certification, that does not necessarily prevent you from applying. Good BBQ Company can provide direction on obtaining the required credential as part of your development for the position.

The pit stays clean and operational. Service gets the product and meat-cutting support it needs. And the Pit Manager works effectively with the Pitmaster and the rest of the management team.
