FOOD & BEVERAGE MANAGER

Position Summary

At Margaritaville Hotel Nashville, we believe every guest deserves an escape from the everyday. The Food & Beverage Manager plays a key leadership role in creating memorable dining experiences across all restaurants, bars, banquets, and special event operations. This position supports the Director of Food & Beverage in leading a high-energy team dedicated to delivering exceptional service, quality food and beverages, and the signature Margaritaville spirit.

The ideal candidate is a hands-on leader who thrives in a fast-paced environment, enjoys developing team members, and understands how to blend operational excellence with genuine hospitality. This role is responsible for ensuring outstanding guest experiences, maximizing profitability, maintaining brand standards, and fostering a fun, engaging workplace culture.

What You'll Bring

Passion for hospitality and creating memorable guest experiences.

• Previous restaurant, resort, hotel, or food & beverage management experience preferred.

• Experience managing banquet and group event operations preferred.

• Strong leadership, coaching, and team development skills.

• Knowledge of food safety, sanitation, alcohol service, and health regulations.

• Ability to work a flexible schedule including nights, weekends, holidays, and special events.

• Strong communication, organizational, and problem-solving abilities.

• Ability to maintain a positive attitude and lead by example during busy service periods.

• Respond promptly and professionally to guest concerns and service opportunities.

• Partner with culinary, sales, front office, and events teams to ensure seamless guest experiences.

• Empower team members to resolve guest issues and create memorable moments.

• Ensure service standards are consistently executed throughout all dining venues and banquet functions.

Leadership & Team Development

• Recruit, train, coach, mentor, and inspire a high-performing food and beverage team.

• Foster a culture built on teamwork, accountability, recognition, and fun.

• Conduct performance reviews and provide ongoing feedback and development opportunities.

• Ensure all team members understand Margaritaville brand standards and service expectations.

• Promote employee engagement and create a positive work environment where associates can thrive.

Financial & Operational Responsibilities

• Assist in developing and managing departmental budgets.

• Monitor labor costs, scheduling, purchasing, inventory, and revenue performance.

• Maximize profitability while maintaining exceptional service and product quality.

• Review forecasts and adjust staffing levels according to business demand.

• Assist with menu profitability analysis, beverage cost controls, and inventory management.

• Ensure all cash handling, accounting, and internal control procedures are followed.

Essential Functions

• Oversee daily operations of restaurants, bars, lounges, in-room dining, and banquet functions.

• Lead service shifts and provide floor presence during peak business periods.

• Maintain beverage, liquor, wine, and banquet inventories.

• Ensure all food and beverage outlets meet Margaritaville brand standards.

• Collaborate with Sales and Events teams to execute group functions, meetings, and special events.

• Monitor banquet setup, service execution, and event breakdown.

• Assist with ordering, receiving, and inventory management.

• Maintain cleanliness, safety, and sanitation standards throughout all outlets.

• Address guest concerns creatively and professionally.

• Ensure labor productivity aligns with forecasted business levels.

• Perform management duties within any food and beverage outlet as operational needs require.

• Support special entertainment, holiday programming, and resort-style events that enhance the guest experience.

• Complete additional responsibilities and cross-functional support as assigned.
