Position Overview
We’re looking for a fast, consistent, and detail-oriented line cook who can execute high-quality Italian dishes under pressure. This is not a “just show up and cook” job—you’re expected to move with urgency, maintain standards, and take pride in every plate that leaves the window.
Core Responsibilities
- Execute menu items consistently according to Dovini standards
- Work assigned station (grill, sauté, pasta, prep) with speed and accuracy
- Maintain clean, organized, and stocked station at all times
- Follow recipes, plating specs, and portion control exactly
- Communicate clearly with expo and team during service
- Handle high-volume service while maintaining food quality
- Assist with prep work, including sauces, proteins, and vegetables
- Properly label, date, and store all food items (FIFO)
- Maintain food safety and sanitation standards at all times
- Clean down station and kitchen thoroughly after each shift

- Show up on time, ready to work — no excuses
- Move with urgency during service
- Stay off your phone on the line
- Keep your station tight and clean at all times
- Take direction without attitude
- Own your mistakes and fix them fast
- Work as a team — no egos in the kitchen
Qualifications
- Previous line cook experience preferred (1–3 years ideal)
- Experience in Italian or high-volume kitchens is a plus
- Ability to work in a fast-paced, high-pressure environment
- Strong understanding of basic cooking techniques
- Ability to stand for long periods and lift 50+ lbs
- Flexible schedule (nights, weekends, holidays required)
