POSITION SUMMARY

Riviera Dining Group is seeking polished, service-driven Nightlife Captains to lead bottle service and elevated table service in a high-volume luxury nightlife environment. The Nightlife Captain owns the guest experience from arrival through the close of the night, directing a bottle service team, executing champagne and spirits presentations, and guiding guests through both food and beverage offerings with precision and confidence. This role combines fine dining service discipline with nightclub and lounge pacing, and requires proven leadership, exceptional attention to detail, and a deep understanding of food and beverage service.

RESPONSIBILITIES

• Lead table service and bottle service from guest arrival through the close of the night, setting the pace, energy, and standard of the section
• Direct, coach, and support servers, bottle servers, bussers, and barbacks throughout each shift
• Execute bottle and champagne presentations with precision, timing, and showmanship, coordinating with hosts, security, and entertainment as needed
• Manage table minimums, spend tracking, running checks, and accurate close-out in the point-of-sale system
• Partner with VIP hosts and reservations on table assignments, guest arrivals, and special requests
• Guide guests through both food and beverage offerings, making confident recommendations that elevate the experience and drive spend
• Communicate guest orders and requests clearly and accurately to servers, bar, and support staff
• Present and announce food and beverage selections with precision, professionalism, and confidence
• Maintain expert knowledge of menus, ingredients, preparation methods, and allergy considerations
• Demonstrate advanced knowledge of cocktails, spirits, champagne, wine pairings, beer, and non-alcoholic beverages
• Support wine and champagne service, including proper presentation, decanting, and appropriate glassware usage
• Anticipate guest needs and provide prompt, attentive, personalized, and discreet service to high-profile and repeat guests at all times
• Ensure all service standards, policies, and procedures are consistently followed
• Review nightly prep lists and confirm readiness of all service elements prior to each shift
• Maintain quality control by adhering to portion sizes, preparation standards, and presentation guidelines
• Oversee cleanliness, organization, and maintenance of tableside and bottle service stations and equipment
• Handle, store, and rotate products properly while maintaining quality and minimizing waste
• Serve alcohol responsibly by verifying identification, monitoring consumption, and escalating intoxicated or disruptive guest situations to management and security
• Report any equipment issues or product concerns to management promptly
• Maintain compliance with all sanitation, health, and safety standards
• Foster strong communication and collaboration with team members and management
• Demonstrate professionalism, leadership, and a performance-driven mindset

REQUIREMENTS AND QUALIFICATIONS

• Minimum of 2 years of experience as a floor manager, supervisor, or similar capacity in a high-volume nightclub, lounge, or upscale and fine dining environment
• Hands-on bottle service experience required; experience leading a bottle service team strongly preferred
• Combined food and beverage service experience across full-service dining and beverage-led late-night service
• Strong knowledge of spirits, champagne, wine, cocktails, and elevated service standards
• Proven leadership skills and the ability to guide, coach, and support team members on a busy floor
• Excellent communication, organizational, and multitasking skills in a loud, fast-paced nightlife environment
• Professional demeanor with a strong focus on hospitality, guest experience, and discretion with high-profile guests
• Proficiency with point-of-sale systems and accurate handling of checks, minimums, and cash
• Food handling certification in compliance with state regulations preferred; responsible alcohol service certification preferred
• Self-motivated, detail-oriented, and performance-driven
• Ability to perform basic arithmetic and manage time effectively
• Ability to follow recipes and maintain confidentiality of company information
• Flexible availability, including nights, late-night and overnight hours, weekends, and holidays

PHYSICAL DEMANDS AND WORK ENVIRONMENT

• Ability to stand and walk for extended periods throughout the shift, including late-night and overnight hours.
• Ability to lift, carry, push, or pull up to 50 pounds as needed, including bottle presentations, ice buckets, and service trays.
• Frequent bending, reaching, twisting, and repetitive movements.
• Ability to work in a fast-paced environment with loud music, low lighting, crowds, and varying noise levels and temperatures.
• Ability to safely navigate busy operational areas and work around equipment, wet surfaces, and other workplace conditions.
