This includes all cost controls, inventory control, cash control, and customer relations. You must set the example and follow all policies and procedures 100% of the time, expecting the same from your crew. Pay Rates / Ladder of Growth Drivers – $8–$10 per hour (take‑home cash and credit card tips daily.
