A GM job where 50 hours is a long week

Most restaurant GMs work 60 to 70+ hours a week. Ours work 42 to 50, and it's hard to hit 50 here. Our restaurants are open 6 AM to 2 PM, so you get your evenings back. If you want to lead a great restaurant and still have a life, read on.

Eggs Up Grill is one of the fastest growing and most successful breakfast, brunch and lunch concepts in the U.S., and was ranked the number one breakfast franchise by Entrepreneur magazine's Franchise 500 for three years in a row. Bates Family Restaurants is opening a new Eggs Up Grill in Morristown on November 23, and we're hiring the leader who will run it.

At a glance

• Pay: $18 to $21 per hour as Kitchen Manager, then $55,000 to $60,000 salary as General Manager

• Profit sharing: up to 2.5% of store net profit as KM, and up to 5% as GM, growing to 10%

• Hours: 36 to 40 a week as KM, 42 to 50 a week as GM, all daytime

• Closed Easter, Thanksgiving and Christmas

• Growth: we're opening more restaurants across East Tennessee and North Carolina, and we promote from within

Your path to General Manager

1. Train in Johnson City. You'll learn our kitchen and systems at our Johnson City restaurant until Morristown opens. Training is paid, and mileage is reimbursed under company policy.

2. Kitchen Manager, Morristown (opening November 23). From opening day you'll own the back of house: food quality, food safety, ordering and inventory, food cost, and building and scheduling your kitchen team. Plan on 36 to 40 hours a week, sometimes more when business needs it.

3. General Manager training. About 8 to 10 weeks before our next Knoxville location on Clinton Highway opens (estimated April 2027), you'll begin GM training.

4. General Manager, Morristown. When our current Morristown leader moves on to open Clinton Highway, you'll take over the whole restaurant. Plan on 42 to 50 hours a week, with built-in raises on your GM anniversaries.

Who we're looking for

• Lead by example and hold the standard with your team every shift

• Love hiring, coaching and developing people

• Are comfortable with labor, food cost and inventory numbers

• Have a ServSafe Food Protection Manager certification, or can earn one within 60 days of starting

• Are available for weekends and holidays, and can commute to Morristown (and to Johnson City during training)

What you'll do as General Manager

Leadership and team (65%)

• Run your restaurant to our standards for operations, Company values and all applicable laws.

• Recruit, hire, train, coach, promote and keep a best-in-class team of Team Members and managers who deliver the Eggs Up Grill experience.

• Build a high-performance culture of integrity, professionalism, mutual respect and inclusion. Give timely feedback, recognize great work, and hold people accountable.

• Keep guests and Team Members safe by following safety and security procedures and reporting incidents right away.

Systems and profitability (15%)

• Spot trends and problems early, and fix them using our tools and systems.

• Hit cost of goods and labor targets by controlling waste and loss and running efficient shifts.

• Keep food safety, cleanliness and sanitation at the highest standard, along with the building and equipment.

• Work closely with your District Manager and ownership to bring the right resources to issues and opportunities.

Sales, service and community (10%)

• Grow dine-in, carry-out, catering and off-premises sales with our marketing programs and local outreach.

• Coach your team on suggestive selling and relentless hospitality, speed and accuracy.

• Build business plans and budgets that grow sales and profit.

• Be a visible, positive part of the Morristown community.

Administration (10%)

• Handle forecasting, scheduling, budgeting, inventory, banking and cash reconciliation, and use our technology well.

• Take on other projects as assigned.
