Position Overview

A premier luxury coastal hospitality destination is seeking an experienced Chef de Cuisine to oversee daily culinary operations across multiple food and beverage outlets, including a signature Pacific Rim-inspired restaurant, a lively bar and grill, an elevated champagne lounge, an oceanfront pool venue, private dining, and exclusive member dining experiences.

This is a highly visible culinary leadership role responsible for maintaining exceptional standards of food quality, presentation, consistency, sanitation, and guest experience across a diverse portfolio of dining concepts.

Reporting to the Executive Chef, the Chef de Cuisine will lead and develop the culinary team while working closely with Food & Beverage leadership to execute sophisticated menus inspired by the flavors and cultures of the Pacific, utilizing high-quality local and seasonal ingredients.

The Culinary Concepts

The property features a diverse collection of elevated dining experiences:

• Signature Coastal Restaurant – A Pacific Rim-inspired destination restaurant drawing culinary inspiration from its dramatic oceanfront setting and the diverse cultures surrounding the Pacific.
• Bar & Grill – A vibrant, energetic venue offering craft cocktails, live entertainment, and contemporary food with a relaxed atmosphere.
• Champagne Lounge – An elegant, London-inspired destination featuring elevated cocktails, an extensive wine and champagne selection, and a sophisticated guest experience.
• Oceanfront Pool Venue – A stylish poolside concept offering classic cocktails, refreshing beverages, and elevated casual bites.
• Private Dining – Customized culinary experiences for special events, celebrations, and VIP guests.
• Exclusive Member Dining – Upscale dining experiences serving private members both within the property and at a beachfront setting.

Key Responsibilities

• Lead, supervise, and coordinate daily kitchen operations across multiple culinary outlets.
• Ensure consistent preparation, portion control, quality, flavor, and presentation of all menu items.
• Train, mentor, and develop culinary team members while establishing a culture of accountability, professionalism, and continuous improvement.
• Collaborate with the Executive Chef and Food & Beverage leadership on menu development and culinary programming.
• Execute menus that reflect Pacific Rim influences while incorporating local, seasonal, and high-quality ingredients.
• Maintain exceptional culinary standards appropriate for a luxury hotel, resort, and fine dining environment.
• Oversee food preparation and production while ensuring proper culinary techniques and execution.
• Manage kitchen inventory, purchasing, ordering, receiving, and food-cost controls.
• Monitor labor and food costs and implement strategies to improve operational efficiency and profitability.
• Develop and maintain kitchen procedures, recipes, production standards, and operating systems.
• Ensure compliance with all applicable health, food safety, sanitation, and workplace regulations.
• Maintain a clean, organized, and highly functional kitchen environment.
• Work closely with front-of-house and service teams to ensure seamless execution and exceptional guest experiences.
• Stay informed on emerging culinary trends, techniques, ingredients, and dining experiences.
• Assist with staffing, scheduling, payroll administration, performance evaluations, and other administrative responsibilities.
• Take an active role in special events, private dining, VIP experiences, and other culinary programming.
• Lead by example and foster a positive, collaborative, and high-performing kitchen culture.

Qualifications

• Minimum 5 years of experience as a Chef de Cuisine or comparable senior culinary leadership role.
• Proven experience in a luxury hotel, resort, upscale restaurant, or fine dining environment .
• Strong background overseeing complex, high-volume kitchen operations and multiple culinary outlets.
• Demonstrated ability to lead, train, mentor, and develop culinary teams.
• Strong understanding of food quality, presentation, sanitation, purchasing, inventory, and cost controls.
• Experience with menu development and contemporary culinary trends.
• Knowledge of Pacific Rim, coastal, Asian-influenced, or globally inspired cuisine is highly desirable.
• Excellent organizational, communication, leadership, and problem-solving skills.
• Ability to remain composed and effective in a fast-paced, high-pressure culinary environment.
• Strong attention to detail and commitment to culinary excellence.
• Culinary school or formal culinary education preferred.
• Bilingual skills are a plus.
• Valid Food Handler Certificate required.

Physical Requirements

• Ability to stand and walk for extended periods.
• Ability to lift and carry up to 50 pounds.
• Ability to work in a fast-paced kitchen environment for extended periods.
• Ability to work flexible schedules, including evenings, weekends, and holidays as required.

Compensation

$95,000–$105,000 annually , depending on experience and qualifications.
