Peggy Focheux Duval: Director of Learning & Development, France Reporting directly to the Chef de Cuisine, the successful candidate will be responsible for delivering engaging and memorable Teppanyaki experiences while maintaining the highest standards of food quality, presentation, hygiene, and guest satisfaction. Key Responsibilities Lead and manage the Teppanyaki section at Umami Restaurant, ensuring seamless daily operations. Prepare, cook, and present Teppanyaki dishes in accordance with established recipes, standards, and guest expectations. Deliver interactive live cooking performances that enhance the overall guest dining experience. Maintain consistency in food quality, taste, presentation, and portion control. Assist the Chef de Cuisine with menu development, seasonal specials, and product innovation. Monitor stock levels and support inventory management, ordering, and cost control initiatives. Ensure strict compliance with food safety, hygiene, HACCP, and sanitation standards. Train, coach, and mentor junior kitchen team members to support their professional development. Collaborate effectively with service teams to ensure smooth communication and exceptional guest service. Support the culinary team in achieving departmental objectives, guest satisfaction targets, and financial goals. Qualifications Qualifications & Experience Proven experience as a Chef de Partie - Teppanyaki or similar role in a luxury hotel, upscale resort, or high-end Japanese restaurant. Strong knowledge of Japanese cuisine, Teppanyaki cooking techniques, and contemporary culinary trends. Demonstrated ability to perform live cooking presentations confidently and professionally. Sound understanding of food safety, HACCP, and international hygiene standards. Strong organizational skills with the ability to work effectively in a fast-paced environment. Excellent communication and interpersonal skills. Positive attitude, creativity, and a passion for delivering outstanding guest experiences. Previous experience in a luxury island resort environment will be an advantage.
