Production Baker

ALMA ("soul" in Spanish and Portuguese) is a neighborhood coffeehouse built around the heart of a farmers market - rooted in community, seasonal produce from local farms and makers, and genuine hospitality. With an excellent coffee program, baked goods, savory menus, takeout, and a small beer and wine list, we aim to be a warm and welcoming spot for both locals and tourists in San Luis Obispo.

We are currently seeking a passionate and talented baker to join our team as a Production Baker. Initially working out of our commissary kitchen and under the direction of the Pastry Chef, this role will be responsible for various technical baked goods preparation and production (working alongside our baking team) for our three full service restaurants (Novo, Luna Red, and Robin's Restaurants), as well as being part of the opening team at ALMA. There will be a lot of hands-on production on a daily basis and this position will have repetition.

Primary Duties and Responsibilities:

This position works closely with the Pastry Chef and will be responsible for performing the following duties (other duties may be assigned):

• Prepare and produce a wide variety of baked goods (desserts, sweet + savory pastries, sauces, breads)
• Follow the production schedule to ensure correct items and quantities are being baked
• Assist Pastry Chef by ordering ingredients, monitoring pars for baking ingredients/product on hand, maintaining accurate records of all ingredients, executing portion control and adhering to production guidelines
• Maintain clean ovens and baking areas in the kitchen
• Train in baking and production prep duties to support as needed
• Ensures that all desserts are prepared and able to be served in a timely manner
• Understands and complies consistently with our standard portion sizing, cooking methods, quality standards and kitchen rules, policies and procedures.
• Complete additional responsibilities as assigned by supervisor(s)

Required Skills/Abilities:

• Excellent communication, organization and prioritization skills
• Basic understanding of professional cooking and standard baking procedures
• Working knowledge of baking techniques and the pastry-making process
• Understanding and knowledge of safety, sanitation and food handling procedures
• Strong attention to detail & high standards of excellence
• Must be able to read and understand recipes
• Must be able to take direction and be self-sufficient
• Must have a high level of integrity
• Passion for food & culinary excellence

Physical Requirements:

• High level of stamina to work on feet for extended periods (be able to work in a standing position for long periods of time up to 8 hours)
• Requires grasping, writing, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity
• Must be able to occasionally lift, balance, and move food product and equipment weighing up to 50 pounds.

Education and Experience:

• At least 1 year of experience as a Commercial Baker or proven experience of any combination thereof
• Must have or be able to attain a valid California Food Handlers card

Physical Requirements:

• High level of stamina to work on feet for extended periods (be able to work in a standing position for long periods of time up to 8 hours)
• Must be able to occasionally lift, balance, and move equipment weighing up to 50 pounds
• Must be able to perform in a fast paced, busy environment with attention to detail
