Role Description The Sous Chef is a full-time, on-site role based at Wanaaha Casino in Bishop, CA. This role supports the Executive Chef in overseeing daily kitchen operations, including food preparation, cooking, plating, and timely service for restaurant, buffet, banquets, and special events. The Sous Chef helps plan menus, develop and test new dishes, and ensure consistent food quality, portion control, and presentation standards. Responsibilities include supervising kitchen staff, coordinating station assignments, providing hands‑on training, and promoting safe food‑handling and sanitation practices. The Sous Chef also assists with inventory control, ordering, minimizing waste, and maintaining a clean, efficient kitchen that meets health and safety regulations. This role requires working a flexible schedule, including evenings, weekends, and holidays, based on casino operational needs. Qualifications Strong culinary skills, including food preparation, cooking techniques, and plating in a high-volume or hospitality environment. Experience supervising or leading back‑of‑house teams, including training, scheduling support, and performance coaching. Knowledge of food safety, sanitation standards, and compliance with local health regulations. Ability to manage multiple tickets and stations under pressure while maintaining quality and consistency. Experience with menu execution, basic menu planning, portion control, and cost-conscious use of ingredients. Effective communication and collaboration skills to work closely with kitchen, service, and management teams. Ability to stand for extended periods, lift moderate weights, and work in a fast-paced kitchen environment. Previous experience as a Sous Chef, Lead Line Cook, or similar role; casino, hotel, or resort experience is a plus. Culinary degree, certificate, or equivalent professional kitchen experience preferred. Willingness to work flexible shifts, including nights, weekends, and holidays as required by casino operations. #J-18808-Ljbffr
