This position is responsible for the preparation, assembly, and presentation of high-quality sushi and cold kitchen offerings, including appetizers, salads, seafood, charcuterie, and composed cold plates. The ideal candidate demonstrates strong technical skill, attention to detail, creativity, and an unwavering commitment to culinary excellence, cleanliness, and teamwork./ph3Primary Responsibilities/h3ulliPrepare, roll, slice, and present sushi according to club standards, recipes, and presentation guidelines./liliExecute all garde manger items including salads, seafood preparations, charcuterie, canaps, dressings, and cold sauces./liliMaintain exceptional standards of product freshness, flavor, and visual presentation./liliEnsure all raw fish handling, storage, labeling, and rotation meet HACCP, health department, and club standards./liliSet up and break down sushi and garde manger stations efficiently for service and events./liliMaintain strict cleanliness and sanitation of all workstations, tools, and equipment./liliMonitor inventory, communicate prep needs, and minimize waste through proper production planning./liliAssist with menu development, specials, and seasonal offerings./liliSupport buffet, banquet, and event production./liliMaintain professional grooming and uniform standards./liliWork collaboratively with all team members./liliPerform additional culinary duties as assigned./li/ulh3Required Qualifications/h3ulli13 years of experience in sushi and/or garde manger/liliServSafe Certification or equivalent/liliStrong knife skills and seafood knowledge/liliExcellent organization and time management/liliAbility to work nights, weekends, and holidays/li/ulh3Preferred Qualifications/h3ulliExperience in private clubs or fine dining/liliFormal culinary training/li/ulpWe exceed expectations by following the C.A.R.M.E.L.
