THE ROLE:

We are seeking a passionate Prep-Cook to join our dynamic culinary team. The ideal candidate will be a creative and organized individual with a deep passion for Japanese cuisine and a flair for modern, fusion cooking. Responsible for: supporting the Chef de Partie managing a work station and assisting with food preparation. 

A Prep Cook is an entry-level position in a professional kitchen, working under a Chef de Partie to prepare ingredients, manage workstations, and assist with basic cooking tasks. They are responsible for chopping, peeling, measuring, and storing food, ensuring cleanliness, and supporting senior chefs to maintain efficient service. 

Key Responsibilities of a Prep Cook:

• Food Preparation & Cooking: Preparing ingredients (vegetables, meats, sauces) for service, including washing, peeling, and cutting. They often assist with plating and basic cooking, such as preparing salads, cold appetizers, or simple hot dishes

ESSENTIAL DUTIES AND RESPONSIBILITIES:

• Prepare and execute recipes according to the Executive Chef's specifications, maintaining exceptional standards of taste and presentation.
• Ensure all food is handled and stored according to strict health and safety regulations (HACCP).
• Manage and maintain the inventory of the restaurant, including food inventory and supply management.
• Receiving, unpacking, and organizing food deliveries, and ensuring proper stock rotation (checking expiry dates). 
• Maintaining a clean, safe, and hygienic workstation, adhering to food safety standards.
• Collaborate with other kitchen staff to ensure smooth and timely service during peak hours.
• Monitor and maintain all kitchen equipment. 
• Maintain a high standard of cleanliness and organization in the restaurant.
• Carry out additional responsibilities from the Executive Chef and the Management team to support the restaurant’s success

QUALIFICATIONS:

• Strong knife skills are a must.
• Ability to lift 50 pounds.
• Culinary degree or relevant certification is preferred.
• Ability to work in a fast-paced, high-pressure environment while maintaining a calm and positive demeanor.
• Exceptional attention to detail and a commitment to producing high-quality dishes.
• Strong understanding of food safety and hygiene procedures.
• Dependable, punctual, and a dedicated team player.
• Ability to stand, walk, and work for extended periods.
• Valid California Food Handler Card is required.
