At Cuttin’ Up Custom Meat Processing , our hooks are always full and our shop is moving at full speed. Serving top livestock producers and hunters across West-Central Missouri, we’ve built a reputation for speed, precision, and top-tier craftsmanship.
We aren't just looking for someone to push a knife—we're looking for a sharp, driven trade professional who thrives in a fast-paced environment, takes pride in high-volume processing, and wants to grow into a senior leadership role or shop supervisor as our business continues to expand.
Key Responsibilities (High-Impact Execution)
- High-Volume Whole Carcass Breakdown: Drive rail-to-counter fabrication, precision quartering, and rapid breakdown of whole animal carcasses (beef, pork, goat, lamb, and wild game).
- Custom Cut Mastery: Read and execute custom cut sheets with speed and accuracy—crafting premium steaks, roasts, specialty trims, and custom burger blends.
- Commercial Equipment Operations: Command commercial bandsaws, high-capacity grinders, sausage stuffers, vacuum sealers, and thermal labeling systems.
- Shop Leadership & Quality: Set the pace for efficiency, maintain razor-sharp sanitation standards, and help guide shop workflow during peak seasons.
Candidate Requirements (Strict & Mandatory)
Applicants who do not meet ALL mandatory criteria below will be automatically disqualified.
- Custom Butcher Shop Experience: Must have proven experience inside a fast-paced custom butcher shop, locker plant, or custom processing facility (grocery retail counter experience alone does not qualify).
- Whole Carcass Breakdown Mastery: Must have direct, hands-on experience breaking down whole animal carcasses from the rail into primal, subprimal, and retail/custom cuts.
- Knife & Trade Speed: Superior knife handling, boning expertise, and comfort operating heavy commercial meat processing equipment safely at a steady pace.
- Physical Capability: High stamina—ability to thrive in a cold environment (35°ree;F–40°ree;F), stand full shifts, and repeatedly lift/maneuver 50–75+ lbs.
- Verifiable References: Must provide contact information for previous custom shop supervisors to verify carcass breakdown skills and attendance record.
Preferred Qualifications & Attributes
- High-volume wild game processing experience (venison season hustle).
- Experience with custom curing, smoking, or specialty sausage formulation.
- Ambitious mindset with a desire to take on shop management or lead butcher responsibilities.
