Assistant Lecturer in Human Nutrition & Dietetics Program

The School of Human Sciences in the College of Health and Human Sciences is searching for an Assistant Lecturer in the Human Nutrition & Dietetics Program. This is a full-time, 11-month Non-Tenure Track appointment with responsibilities divided between teaching (75%) and administration of the Dietetic Internship Program (25%). The individual will serve as the Dietetic Internship Director and ensure compliance with Accreditation Council for Education in Nutrition and Dietetics (ACEND) standards. The 11-month structure reflects the need for year-round program oversight, including supervision of interns and program operations during the summer term. Examples of Duties

Dietetic Internship Director (25%)

• Serve as the director of the ACEND-accredited Dietetic Internship Program.
• Ensure continuous compliance and maintenance of ACEND program accreditation standards, including on-going review of curriculum, policies, procedures, required competencies and program evaluation.
• Provide year-round program oversight, including active supervision during summer months when interns are engaged in supervised practice experiences.
• Coordinate, monitor, and evaluate supervised practice experiences across clinical, community, and food service settings.
• Establish and maintain affiliation agreements with preceptors and practice sites.
• Recruit, admit, advise, and evaluate dietetic interns.
• Conduct ongoing program assessment and continuous quality improvement, including tracking program outcomes and graduate success.
• Prepare and submit all required ACEND documentation, including annual reports, self-studies, and accreditation materials.
• Maintain program handbook, policies, and website to ensure accuracy and compliance.
• Ensure appropriate evaluation of interns and preceptors.
• Maintain records of complaints about the program received from interns or others, including disposition of the complaint.
• Lead accreditation activities, including site visits and program review processes.
• Manage program resources and budget, as applicable.
• Engage with advisory boards and community stakeholders to support program quality and growth.

Instructor Responsibilities (75%)

• Teach undergraduate and/or graduate courses in nutrition and dietetics aligned with program needs.
• Develop, update, and deliver course content reflecting current evidence-based practice.
• Assess student learning outcomes and contribute to program-level assessment and accreditation efforts.
• Advise and mentor students.
• Participate in curriculum development and program improvement initiatives.
• Engage in service at the program, school, college, and/or university level.
• Maintain professional credentials and engage in ongoing professional development.

Qualifications

Minimum Qualifications:

• Master's degree in Nutrition, Dietetics, or closely related field.
• Credentialed as a Registered Dietitian Nutritionist (RDN).
• Minimum of three (3) years of professional experience in dietetics.
• Demonstrated experience in clinical, community, or food service nutrition.
• Eligibility for licensure in the State of Illinois (if applicable).

Preferred Qualifications:

• Doctoral degree in Nutrition, Dietetics, or related field.
• Prior experience directing or coordinating a dietetic internship or supervised practice program.
• Knowledge of ACEND accreditation standards and processes.
• Teaching experience in higher education.
• Experience with program assessment, accreditation, or outcomes tracking.

Supplemental Information

Summer responsibilities are required and include supervision of interns in supervised practice, coordination with preceptors, program assessment activities, and program operations necessary to maintain ACEND compliance. Teaching responsibilities are typically concentrated in the fall and spring semesters, with limited or no formal classroom teaching in the summer, depending on program needs.
