Overnight Head Baker

An established and growing artisan bakery and café concept in Baltimore is seeking an experienced Overnight Head Baker to lead its baking and production operation. This is a hands-on leadership role overseeing a team of bakers and ensuring consistency, quality, and efficiency across a high-volume production environment. The ideal candidate brings a strong artisan baking foundation along with experience working within a structured, manufacturing-style production operation. This individual will play an important role in maintaining the quality and craftsmanship of the bakery's products while developing the team, improving production processes, and supporting the continued growth of the organization. Position Overview The Overnight Head Baker will oversee daily baking and production operations, ensuring products consistently meet established standards for quality, taste, appearance, and texture. This role requires someone who can balance the craftsmanship of artisan baking with the organization, consistency, and efficiency required in a high-volume production environment. Key Responsibilities Lead, train, mentor, and develop the overnight baking team Assign responsibilities and establish production schedules to maximize productivity and execution Maintain a positive, accountable, and collaborative work environment Conduct performance evaluations and provide ongoing coaching and constructive feedback Maintain strict quality-control standards across all bakery production Regularly inspect finished products for taste, appearance, texture, and consistency Plan production based on demand, seasonal fluctuations, and special orders Optimize labor, ingredients, equipment, and other resources while minimizing waste Continuously evaluate baking and production processes to improve efficiency and control costs without sacrificing quality Collaborate with bakery leadership on recipe development, new flavors, and innovative products Maintain food safety, sanitation, and quality-control standards throughout the operation Qualifications Proven experience as a Head Baker, Lead Baker, Production Baker, or similar bakery leadership role Experience within a manufacturing or high-volume bakery production environment strongly preferred Strong knowledge of artisan bread production, baking techniques, ingredients, and equipment Demonstrated ability to lead, train, and motivate a diverse production team Strong understanding of food safety and quality-control procedures Excellent organizational and time-management skills Ability to manage multiple priorities within a fast-paced, deadline-driven environment Strong communication and interpersonal skills Creative mindset with an interest in product development and innovation Ability to maintain exceptionally high standards while identifying opportunities to improve efficiency and reduce waste The company offers a comprehensive benefits package designed to support long-term growth and retention, including: Medical, dental, and vision insurance Retirement savings plan Paid time off Short-term disability Flexible spending accounts Employee assistance program Additional company benefits and perks This is an excellent opportunity for an experienced bakery leader to join an established organization with a strong reputation, significant production infrastructure, and continued plans for growth. #J-18808-Ljbffr One Haus
