(One bottle for every 4 chairs)Making sure the garbage receptacles are clean and empty, and stainless tops are in placeMaking sure all glass is clean: doors, windows, and sneeze guardEnsure the cleanliness of the back wall outside of the kitchen door near the bathroomsMake sure bathrooms are clean and stocked properlyFill soda machine with iceSet up Soda Station and Beer TapsBrew Tea: 5 Tea bags per brewTurn on Hot and Cold Holding Tables and set up accordinglyStock sides lowboy and make back-ups for the daySet up sani-bucketsFill cabinet underneath beer taps with folded napkinsSet Up Kitchen, including 2 oz. cups and lidsStock bottles of wine and wine cupsMake sure fry cups are ready for calling near the kitchen windowMake sure all paper goods, containers, utensils, etc. on the line and register are stocked and ready for the day as well as back-upsSet up simple syrup for iced teaSet up trays, including backups and prepare paper liners for the dayStock extra serving utensils in case the ones on the line get dirtyThroughout the shift·Provide accurate, friendly and efficient customer serviceCommunicate orders to BOH team members clearly and conciselyPerform all POS functions, including cash handling, with confidence and accuracyAnswer any questions customers may haveHandle stressful and challenging situations with patience and professionalismCommunicate openly with team members and Line Leaders regarding any questions or challengesClosing DutiesPut chairs up on tablesSweep floors including front vestibule and wood roomMop restaurant floor with blue mopEmpty and replace garbage cans, clean stainless tops with hot soapy water and sanitize. Bring all dirty trays to washerFully clean glass: doors, windows, sneeze guards etcRestock entire line and register area as well as back-ups underneathClean kitchen window door, and surrounding walls with hot soapy water and sanitizeClean drink cooler with hot soapy water and sanitize. Do not forget to clean glass, handles, sides and check bottom for spills and clean if necessary. Restock for following dayWrap left over ketchup and leave in fridge for next day and send holder and pump to dish washerRemove/melt extra ice from soda machine and soak nozzles overnight in hot water. Remove back grate and drain and bring to dishwasher. Fully clean machine, including the metal taps and sides. Wrap taps with saranClean back up fridge inside and out including handles. Restock for following dayMake back-ups for next dayPut all sides in clean pans/wrap/date/refrigerateFully clean all stainless surfacesRemove grates from drains and clean. Clean drains with hot soapy water, pour bleach water down drains and wipe down with sanitizerClean hand sinks with hot soapy water and pour bleach water down drain. Fill c-foldsWipe I-Pad screens with wet nap to remove greaseClean wall and ledge of window near the smoker behind the cutting stationWhen everything is finished, bring towels to backEvery team member is responsible for these duties before, during, and after their shift, and Line Leaders should be involved to the extent required at each location.
