JOB SUMMARY  

Maintains kitchen work areas and restaurant equipment and utensils in clean and orderly condition by performing the following duties.

• Operate and maintain cleaning equipment and tools, including the dish washing machine, wash stations and pot-scrubbing station.
• Breakdown dirty bus tubs. Scrapes food from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine. Spray all racked items with hot water to loosen and remove food residue.
• Use detergent, rinsing, and sanitizing chemicals in the 3-compartment sink to clean dishes, pots, pans, and trays.
• Sweeps and mops kitchen floors.
• Wash and disinfect all kitchen area, worktables, walls, doors, refrigerators, tools, knives, and equipment.
• Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing. 
• Sort, soak, and wash/re-wash silverware.
• Sorts silverware and ensure clean wares are stored in appropriate areas.
• Transfers supplies and equipment between storage and work areas.
• Clean and mop all areas in assigned departments. Keeps work area clean and free of clutter.
• Dispose of glass in the proper containers.
• Must wear black non-slip shoes or temporary non-slip shoe covers.
• Removes compostable, recycling and garbage material from the kitchen. Places it in designated containers. Break down cardboard boxes and place them and other recyclables in the recycle bin. Empty and maintain trashcans and dumpster area. Cleans and sanitize garbage cans.
• Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications. Protect company assets. 
• Develop and maintain positive working relationships with others; support team to reach common goals. Ensure adherence to quality expectations and standards.
• Other duties as assigned by management, including any supervisor, manager, or executive.

EDUCATION and/or EXPERIENCE  

Must have high school diploma or GED equivalent; or working towards completion thereof within three months of being hired or continuing high school with appropriate work permit.

LANGUAGE SKILLS  

Ability to read a limited number of two- and three-syllable words and to recognize similarities and differences between words and between series of numbers. Ability to print and speak simple sentences. Speak with others using clear and professional language.

MATHEMATICAL SKILLS  

Ability to add and subtract two-digit numbers and to multiply and divide with 10's and 100's. Ability to perform these operations using units of American money and weight measurement, volume, and distance.

REASONING ABILITY  

Ability to apply common sense understanding to carry out simple one- or two-step instructions. Ability to deal with standardized situations with only occasional or no variables.

CERTIFICATES, LICENSES, REGISTRATIONS  

• While employed, you must maintain a valid and active Blue Lake Tribal Gaming Commission License.
• Must maintain a valid food handlers’ certification.

Other Skills and Abilities  

Familiar with sanitation standards for restaurants, preferred.
