Lead Prep Chef
XO is seeking a highly organized, experienced Lead Prep Chef to help build Central Massachusetts' premier upscale Mexican restaurant. This is not a typical prep cook position. We are looking for someone who takes pride in craftsmanship, consistency, and preparing every ingredient to the highest standard.
This role is approximately 80% prep and 20% line cooking . You will be responsible for ensuring the kitchen is fully prepared for service each day by producing high-quality ingredients, maintaining organization, and supporting the culinary team during peak hours.
Responsibilities
- Prepare meats, seafood, vegetables, sauces, salsas, and other ingredients to recipe specifications.
- Maintain a clean, organized, and efficient prep kitchen.
- Follow standardized recipes with precision and consistency.
- Ensure all prep is completed before service begins.
- Assist on the line during busy service periods when needed.
- Monitor inventory and communicate product needs.
- Maintain food safety and sanitation standards at all times.
- Work closely with the Chef to uphold XO's high culinary standards.
Qualifications
- Minimum 3 years of professional kitchen experience.
- Strong knife skills and scratch cooking experience.
- Ability to multitask in a fast-paced environment.
- Experience with fine dining or upscale restaurants preferred.
- ServSafe certification is a plus.
- Reliable, punctual, and committed to excellence.
