Openning Q1 2027 Pizzeria di Territorio · Raleigh, NC Full-Time, Salaried · $60,000–$75,000 + Performance Bonus + Benefits Total compensation potential: up to $81,000 annually About Us Pizzeria di Territorio is a new elevated Italian pizzeria opening in Raleigh, NC. We are a brick oven concept rooted in authentic regional Italian culinary traditions — terroir-driven ingredients, DOP-certified products, slow-fermented doughs, and genuine Italian hospitality. "Di Territorio" means "of the territory" — every ingredient, every dish, and every glass on our menu tells a story about where it comes from. We are a 3,500 square foot space housing two concepts. Compact by design. Alongside the pizzeria, the space also houses Stoccaggio — an intimate evenings-only speakeasy pouring elevated craft cocktails and Italian wine alongside upscale small plates. We intend to make a profound impression. Who We're Looking For A hospitality professional who loves the floor as much as they love the business. You can run a flawless Friday dinner service and sit down Monday morning to review the labor report with genuine clarity and ownership. You build teams that want to come to work. You make guests feel like they've found their neighborhood trattoria on their very first visit. A genuine passion for Italian food, wine, and culture is not a formal requirement. But it is absolutely the thing that will make you love this job — and love what we're building. What You'll Do Own the full front of house operation from day one — floor, team, systems, and culture Hire, train, schedule, and develop a FOH service team built on genuine Italian hospitality standards Manage FOH labor costs to a target of revenue; proactive scheduling based on covers data Operate and maintain our POS system (Toast preferred) and manage all daily reporting and cash handling Manage our reservation and waitlist platform (Resy or OpenTable) — configuration, pacing, and guest experience Own FOH vendor relationships: linen, beverage supply, small wares, and service supplies Collaborate closely with our Head Chef on service flow, menu knowledge training, and seasonal menu transitions Represent Pizzeria di Territorio in the Raleigh dining community — press, partnerships, neighborhood events, and Italian cultural programming Ensure full compliance with North Carolina Responsible Alcohol Service requirements for all FOH staff What You Bring 3+ years of progressive FOH leadership experience in full-service dining 1+ year in a GM, AGM, or equivalent title strongly preferred Comfort with P&L basics — you can read a labor report and know what to do about it Experience with Toast POS or a comparable modern POS platform preferred North Carolina Responsible Alcohol Service certification (or willingness to obtain before first day of service) A genuine love of hospitality — you find energy in the floor, not just behind it Interest in Italian food, wine, and culture; knowledge of Italian wine regions and varietals is a plus and a path for growth What We Offer $60,000–$75,000 base salary , commensurate with experience Up to $6,000 annual performance bonus , paid quarterly based on KPIs including guest satisfaction, labor efficiency, and team retention Total cash potential up to $81,000 Employer contribution toward individual health insurance; dental and vision options available 10 days PTO + 5 sick/personal days; restaurant closed Thanksgiving & Christmas $750 annual professional development budget — conferences, WSET wine certification, Italian culinary courses, beverage education $300/year dining research reimbursement 50% dining discount for GM + one guest at all times One complimentary staff meal per shift; full family meal participation $50/month cell phone stipend Formal profit-sharing conversation at the 18-month mark 2 consecutive days off guaranteed per week; schedule posted 2 weeks in advance Real growth path: Director of Operations, brand expansion, and equity conversations are on the table for the right person To Apply We're not looking for a formal cover letter.
