About Us: Kassava is bringing a brand-new, elevated Afro-Tex-Mex concept to Lewisville. We operate a high-volume, fast-casual assembly line. We are currently in the pre-opening phase and are looking for a strong, ambitious Lead Cook who is ready to step up, help us organize the kitchen from scratch, and lead our daily prep and lunch services.
What You Will Do: - Pre-Opening: Work directly with ownership to establish prep stations, organize dry storage, and receive our initial wholesale inventory.
- Morning Prep: Execute high-volume batch cooking for our signature rice, red beans, and custom marinades. Prepare complex scratch-made bases (including strict palm-oil-free peanut blends).
- Lunch Service: Manage the flat-top and grill stations, perfectly executing grilled proteins during heavy lunch volume.
The 3:00 PM Handoff: Ensure all front-line hot-holding steam tables are fully stocked and temperature-controlled for the evening service before clocking out.
- Standards: Enforce aggressive health code standards, manage daily prep lists, and oversee proper FIFO storage protocols in the back kitchen.
What We Are Looking For:
- Available for morning and early afternoon shifts (approx. 9:00 AM – 3:00 PM).
- A highly experienced line cook ready to take on supervisor responsibilities.
- Strong knife skills, a sense of urgency, and the ability to batch-cook at high volumes.
- A hands-on worker who is ready to roll up their sleeves and physically organize a kitchen before the cooking even begins.
