DESCRIPTION Expo (Expeditor) - Role Overview The Expo (Expeditor) is the communication hub between the kitchen and front-of-house team, ensuring every dish is accurate, complete, and delivered quickly. In a breakfast setting, this role is critical for handling high-volume, fast-turn tables while maintaining food quality and timing. •
Core Responsibilities 1. Order Coordination & Timing • Read and organize tickets from the POS system • Call out orders clearly to kitchen staff (eggs, sides, modifiers, etc.) • Ensure all items for a table are ready at the same time • Manage ticket flow during peak breakfast rush (weekends especially) •
2. Food Quality & Accuracy • Check plates for accuracy (correct sides, modifiers, doneness of eggs, etc.) • Ensure proper presentation before food leaves the kitchen • Catch and fix mistakes before dishes go out •
3. Communication Hub • Act as the bridge between servers and kitchen staff • Communicate special requests, allergies, and modifications clearly • Provide updates to servers on delays or re-fires •
4. Plate Assembly & Garnishing • Assist in final plating (toast, sides, garnishes, sauces) • Ensure plates are clean, organized, and visually appealing • Organize trays for efficient food running •
5. Speed & Workflow Management • Prioritize tickets based on timing and table needs • Keep the line moving smoothly during rush periods • Work closely with cooks to maintain pacing and avoid bottlenecks •
6. Cleanliness & Organization • Keep expo line clean and stocked (butter, jam, syrup, garnishes) • Maintain organized ticket system • Follow food safety and sanitation standards •
Breakfast-Specific Skills • Strong understanding of egg styles (over easy, scrambled, poached, etc.) • Ability to track multiple short cook-time items simultaneously • Comfort with high-volume, fast table turnover • Awareness of common breakfast modifiers (gluten-free toast, no dairy, etc.) •
Key Skills • Multitasking & speed • Clear verbal communication • Attention to detail • Team coordination • Time management •
Work Environment • Fast-paced breakfast/brunch service (peak hours: mornings + weekends) • Standing for long periods • Hot kitchen environment REQUIREMENTS
