Cook-Residential Treatment Program-Laveen

Position Summary: Prepares individual food items and prepares full meals while following all sanitation and procedural requirements and regulations by performing the following duties personally. Responsible for ensuring that all critical tasks are fulfilled on a timely basis.

Critical Tasks:

• Complies with therapeutic spreadsheets and follows recipe/diet cards without errors.
• Adheres completely to cleaning schedules and requirements.
• Receives and examines foodstuffs and supplies to ensure quality and quantity meet established standards and specifications.
• Maintains detailed knowledge of and compliance with all sanitation requirements and regulations.
• Selects recipes based on type of food to be prepared.
• Supervises other staff members engaged in preparing, cooking, and serving meats, sauces, vegetables, soups, and other foods.
• Cooks or otherwise prepares food according to recipe and all individual dietary requirements.
• Cuts, trims, and bones meats and poultry for cooking.
• Portions cooked foods or gives instructions to workers as to size of portions and methods of garnishing.
• Carves meats.
• Ensures that food storage, refrigeration and freezing temperatures and procedures are adhered to by all staff members.
• Adheres to resident likes and dislikes while complying without exception to individual resident dietary requirements.
• Orders products and supplies as directed by supervisor.
• Sets up and prepares/serves catering events.
• Washes all kitchen items as required.
• Ensures that all kitchen security procedures are adhered to.
• Monitors inventories and makes recommendations to supervisor regarding inventory levels, needs and food item quality.
• Demonstrates ability to regularly change priorities to accomplish all tasks despite frequent interruptions.
• Demonstrates ability to clearly communicate, both orally and in writing, while performing all essential functions.
• Performs other special projects and duties as assigned.

Required Qualifications:

• High School Diploma or GED preferred.
• Current Food Handlers Card required. Ability to obtain within 30 days in position.
• Institutional food service cook or chef experience preferred.
• Prior medical environment work experience is preferred.
• Demonstrated ability to relate to diverse cultures and specifically the Gila River Community and/or other Native American cultures.
• Employment at the Caring House requires: AZ Department of Public Safety Fingerprint Clearance Card.
