Job Description: Prep Cook / Salad Prep Position Title : Prep Cook / Salad Prep Reports To : General Manager / Associate Manager Position Overview The quality, quantity, freshness, tastiness, and presentation of our products have significant impact on the perceptions our guests have of Golden Corral. Although the Prep Person does not have direct contact with that guest, the Prep Person’s duties affect every guest. The Prep Person is responsible for the preparation (cutting, slicing, peeling, etc.) of all fresh fruits and vegetables that are used in Golden Corral. The freshness of our Cold Choice Buffet makes a statement even to those who do not order it. A guest who perceives the buffet to be a fresh, high‑quality meal will also believe the same of all Golden Corral entrees. For this reason, the Prep Person has a very important role in “Making Pleasurable Dining Affordable.” Adherence to Standards Prepares prep items according to Golden Corral product specifications and recipes. Maintains a standard inventory of prep items according to the Prep Production Guide and the Display Cooking Prep Production Guide and updates the two guides as directed by management. Ensures optimum yield of products through the product cycle. Labels, dates, and rotates all bulk produce and prepped items. Ensures all food items are in approved, covered storage containers. Completes use and follows the buffet production system to ensure quality and shelf life compliance. Notifies the Manager of any discrepancies; for example, food spoilage, invoice errors, excessive waste, or products that do not meet specifications. Assists the Buffet Attendant in maintaining a full, clean buffet. Cleanliness Cleans, maintains, and organizes prep area including cooler(s), equipment, and dry storage. Performs duty roster and Cleanliness, Service, and Quality (CSQ) responsibilities. Knows and follows position responsibilities as they relate to just‑in‑time delivery. Follows local health department laws. Guest Service Performs administrative tasks and helps guests during meal periods. Performs other functions that may be necessary to ensure guests receive a pleasurable dining experience. Friendly and courteous to guests and assists them with the products. Maintains professional communication at all times. Qualifications Previous cooking experience in a fast‑paced restaurant or kitchen environment preferred. Knowledge of cooking techniques, food safety, and sanitation standards. Ability to multitask and work efficiently under pressure. Strong communication skills and ability to work well with a team. Ability to follow recipes and instructions with attention to detail. Job Requirements Ability to stand for extended periods (4‑8+ hours) with periodic breaks. Perform repetitive motions, including frequent use of hands and arms for tasks such as chopping, stirring, carrying, and operating equipment. Frequent bending, stooping, squatting, stretching, twisting, and reaching above eye level. Capability to walk up and down stairs and use a step ladder as needed. Occasional sitting, talking, and active listening as required by the role. Ability to lift and carry up to 50 pounds regularly as part of job duties, including but not limited to food supplies, dishware, and equipment. When handling heavier loads, employees MUST use appropriate lifting equipment and/or seek assistance from a second person. Ability to move around the kitchen quickly and efficiently. Compliance with food safety and sanitation regulations. Work Environment / Job Conditions Flexible scheduling, including nights, weekends, and holidays. Work in a loud, fast‑paced environment. Employees may regularly work in varying temperature zones, including hot kitchen areas with stoves, ovens, grills, and fryers, as well as cold storage areas like refrigerators and freezers.
