Description Of Job This Correctional Support Trades Supervisor I (CSTS I) is a Food Service (FS) Supervisor in a Colorado Department of Corrections (CDOC) prison facility. Position oversees the production of meal services for an inmate population which could range from 600 to 7500 meals daily. Responsibilities include, but are not limited to: ensuring the safety and security of the public, facility staff and inmates; ensuring efficient meal service to include medical and/or religious diets during assigned shift and supervising inmate work crews in daily kitchen operations; ensuring sanitation and compliance with all applicable regulations, standards and guidelines and ensuring appropriate use of resources and inventory. The FS Supervisor prepares inmates for community re-entry by promoting the Colorado Department of Corrections Mission and Vision while adhering to a high level of integrity and commitment. Safety & Security: Ensuring a safe and secure environment by managing training, keys, tools, chemicals, inmate counts, searches, escorts, movement, kitchen access, and the use of restraints/force. Operations: Overseeing the safe, compliant, and efficient production of food service, including meal prep, cooking, portioning, sanitation, managing menus/recipes (including various diets), supervising inmate workers, and controlling inventory/waste/expenses. Supervision: Training, supervising and hiring of inmate workers, enforcing work standards, creating schedules, conducting evaluations, monitoring hours/wages, and providing meaningful re-entry work experience. Sanitation & Compliance: Maintaining a sanitary workplace, ensuring proper food handling/hygiene, adhering to production procedures, maintaining equipment/cleanliness, and ensuring inmate adherence to all rules and guidelines. Budget/Inventory: Monitoring usage, expenses, and waste to maintain the budget, controlling waste/theft, tracking inventory levels, ordering goods, and checking deliveries. The position notes that working conditions may require additional hours/shifts and may involve working near industrial equipment in a loud environment. Training in self-defense, oleoresin capsicum use, and public safety radio operation is required. Minimum Qualifications Education: High School diploma or General Education Diploma (GED). Experience: The position requires four (4) years of professional experience in food preparation, handling, and/or cooking. Alternatively, four years can be met by combining a minimum of two (2) years of food preparation experience with either: A minimum of two (2) years of correctional experience (security-related duties such as monitoring inmates, preventing contraband, and responding to emergencies), or Two (2) years of experience in the hospitality industry (food and beverage, lodging, or travel/tourism). Substitutions: Relevant coursework (culinary arts, hospitality, dietetic/nutrition) may substitute for experience on a year-for-year basis, and coursework in Criminal Justice can substitute for the correctional experience only. Transcripts are required for all substitutions. Required Competencies For Success In This Position: Ability to read and comprehend the English language. Ability to effectively communicate fluently in English both verbally and in writing. Strong work ethic, integrity and dependability. Strong communication, interpersonal and conflict resolution skills and the ability to motivate co-workers/inmates to work cooperatively. Knowledge of and ability to maintain sanitation/hygiene standards and use equipment and tools safely and skillfully. Ability to effectively supervise inmates and prepare them for successful community re-entry. Strong desire to work cohesively as a team. Ability to troubleshoot and ensure timely meal service in a high-stress, volume-oriented and security-driven environment, with firm deadlines and mandatory reporting/logging guidelines. Strong desire to ensure organization in the kitchen and the timely and systematic completion of prep, post-production and sanitation tasks. Willingness and ability to maintain a safe and secure work environment and respond to emergency situations. Ability to pay special attention to details and determine to use state resources efficiently. Ability to perform intermediate keyboarding skills, manipulate electronic programs and communicate via computer-based email. Self-control, a strong sense of the ability to work in stressful, potentially violent situations. Ability to remain alert, emotionally stable, and mentally resilient under pressure and observant throughout their shift. Tolerance to stress, confinement, and high-stakes interaction. Preferred Qualifications Experience within a Colorado State Agency providing service to hard-to-serve populations. Experience supervising/work-leading in a Correctional, Military or Law Enforcement kitchen (with or without correctional setting). Experience in corrections outside of a correctional kitchen, performing security-related duties. Experience creating medical and/or religious meals. Culinary or Hospitality Degree from an accredited school. Serve Safe or other Food Protection Manager Certification.
