Bourke Street Bakery is seeking an experienced and reliable Overnight Baker to join our bakery team. This role is ideal for someone passionate about artisan bread baking, who thrives in an early-morning production environment and takes pride in producing high-quality baked goods from scratch.
Key Responsibilities- Prepare, mix, shape, proof, and bake artisan breads according to bakery standards
- Manage overnight production schedules to ensure fresh products are ready for morning service
- Monitor dough fermentation and baking times with consistency and precision
- Maintain cleanliness and food safety standards throughout the shift
- Operate bakery equipment safely and efficiently
- Work collaboratively with the baking and kitchen teams to meet daily production targets
- Assist with inventory rotation and ingredient preparation as needed
- Minimum 2 years of professional bread baking experience
- Strong knowledge of artisan bread techniques, dough handling, and fermentation
- Ability to work independently during overnight shifts
- Reliable, punctual, and highly organized
- Ability to stand for extended periods and lift up to 25 kg when required
- Food safety knowledge and attention to detail
- Availability to work overnight shifts from 12:00 AM to 7:00 AM , including weekends and holidays if needed
- Experience in a high-volume artisan bakery
- Passion for quality ingredients and traditional baking methods
