DIRECTOR OF FOH & BEVERAGE OPERATIONS

LaCoco's — High-Volume Restaurant, Sports Bar & Pizzeria

Salary: $61,000–$65,000 + Performance Bonus + Benefits

LaCoco's is looking for an experienced, hands-on restaurant leader to take ownership of our Front-of-House and Beverage Operations as we prepare for a major expansion.

This is not a traditional Bar Manager position.

We are a high-volume, established restaurant, sports bar and pizzeria with a large dine-in, carryout, delivery and private-event business. We operate long hours, host major sporting and PPV events, and are preparing to add a new second-floor dining room, rooftop dining, additional bar and significant additional seating.

We are looking for someone who can lead people, build systems and run a busy restaurant floor—not manage from an office.

THE POSITION

The Director of FOH & Beverage Operations will report directly to our General Manager and take ownership of the complete dine-in and beverage operation.

The position currently leads approximately 16–20 FOH and bar employees , including servers, bartenders, bussers and runners.

Responsibilities include:

• FOH and bar scheduling
• Recruiting, interviewing and developing employees
• New-hire onboarding and training
• Server, bartender, busser and runner performance
• Guest-service standards
• Dining-room and bar execution
• Opening and closing procedures
• FOH labor management
• Bartender leadership and training
• Beverage standards and consistency
• Liquor ordering and inventory coordination
• Inventory-variance follow-up
• Guest recovery
• Major sporting events and UFC/PPV execution
• Private-party planning and FOH execution
• Seasonal drinks and beverage promotions
• Developing Shift Leads and future managers
• Working closely with the GM, Production/BOH leadership and Marketing

WHAT WE ARE LOOKING FOR

We want a restaurant operator .

Someone who can walk into a busy restaurant, look around and immediately understand what needs attention.

Someone who knows how to schedule properly, train employees, hold people accountable, solve guest problems, control a bar, develop leaders and keep a team moving during high-volume service.

Strong candidates should have proven management experience in a:

• High-volume restaurant
• Sports bar
• Full-service pizzeria
• Bar & grill
• Casual or upscale-casual restaurant
• High-volume hospitality operation

Experience managing both FOH and beverage operations is strongly preferred.

Experience with private parties, special events, high-volume sports events or restaurant expansion is a plus.

THIS IS A HANDS-ON POSITION

We are not looking for someone who only writes schedules or manages from an office.

Our managers lead from the floor.

When the restaurant gets busy, we expect our management team to recognize what needs to happen and make it happen.

At the same time, the successful candidate must be able to build a team and systems so the operation does not depend on one person doing everything.

COMPENSATION

Base Salary: $61,000–$65,000

MAJOR GROWTH OPPORTUNITY

LaCoco's is preparing for a major expansion that will add:

• Second-floor indoor dining
• Rooftop dining
• An additional full bar
• Significant additional seating
• Expanded private-party and event opportunities

The FOH/bar team is expected to grow from approximately 16–20 employees today to approximately 25–30 employees after expansion.

This position is expected to grow significantly with our expansion, creating increased responsibility, leadership opportunity and compensation potential for the successful candidate.

The right person will have the opportunity to help build the expanded operation before it opens —including recruiting, training, leadership development and establishing service standards.
