Cellar Enologist

Job Description:

Lasseter Family Winery is looking to hire a new team member for our production staff. This position is a great opportunity to learn about small lot winemaking and work closely with the Cellarmaster and Winemaker. Assisting in all aspects of winery production, learning to work in the cellar and winery laboratory.

Key Responsibilities:

Cellar Duties:
Perform barrel work, including receiving, racking, filling, sampling, topping, cleaning, and sanitation.
Assist in bottling preparation of wines, including blending, filtration, and pre-bottling analysis.
Perform additions to wines and musts.
General cleaning and sanitation of winery and equipment.
Assist with fermentation management, performing pump-overs, punch downs, and brix checks.
Assist with fruit receival, crushing/pressing and cleaning of crush equipment.
Learn and assist with press operation, and separation of press fractions.
Accurately complete work orders and other record keeping documentation.
Assist Cellarmaster in all other cellar related duties.
Perform other duties as required to ensure high-quality winemaking.

Lab Duties:
Run lab analysis to monitor wine stability and determine wine chemistry.
General maintenance and upkeep of lab equipment.
Keep a clean and organized laboratory.
Prepare Bench Trials to assess wine additions.
Prepare Blending Trials for sensory evaluation.
Participate in Blending Trial tastings.
Perform any other duties as required to maintain the stability and quality of our wines.

Necessary Skills and Abilities:
A BS in Enology or other wine related field is highly desired, or a high school diploma and 2 years of winery experience.
Basic understanding of cellar operations and willingness to learn.
Ability to work independently with some supervision.
Ability to work long, variable hours during harvest.
Ability to take direction, but will also be unafraid to ask questions, and seek advice/clarification when something is unclear.
Possession of a valid driver’s license.
21 years of age
Ability to understand, speak, read, and write in English.

Physical Demands and Work Conditions:
Working conditions in certain areas of the winery can be cold/hot, wet, slippery and noisy.
Frequent walking, including going up and down stairs and ladders, and bending are required.
Able to stand and walk for long periods of time.
Must be able to lift 50 pounds repeatedly.
Ability to carry up to 50 pounds over moderate distances.
Ability to bend, twist, stoop, reach, crawl and walk.
Ability to climb ladders and stairs.
Ability to pull or push objects over moderate distances.
