Main Duties As Cook II, you will be responsible for preparing food according to recipe specifications, ensuring the overall success of daily culinary operations, and maintaining ingredient quality. You must work well under pressure and uphold restaurant standards during busy periods. General Duties Stand and/or walk for extended periods of time. Maintain a notebook to write recipes, procedures and prep lists. Develop and maintain a positive working relationship with other employees. Communicate professionally with Sous Chef(s), Executive Sous Chef and/or Executive Chef, discussing hotel status, special guest requirements, kitchen status, cleanliness, projects, morale, and ideas to improve guest experience and revenue. Coordinate daily communication with stewards to ensure maximum sanitary standards. Give and log daily, weekly and monthly projects to stewards. Pursue continuous learning about food service through literature and dining. Lead by example as a confident leader. Ensure kitchen is clean and sanitized before shift change. Confirm stewards have completed scheduled cleanliness of walk‑ins, lines and stewarding areas. Perform line checks to ensure quality and shelf life of product. Manage product usage and minimize loss via alternative outlets. Control portion sizing for consistency. Assist Supervisor with State and Internal audit logs and checklists. Update recipe books with proper procedures. Record protein/plate counts for service. Maintain preventative maintenance log in Chef’s office with engineering. Check walk‑ins for proper storage and rotation. Plate dishes using proper service ware. Handle shift line‑ups and inform F&B staff of specials and unavailable menu items. Keep storerooms organized and notify of maintenance needs. Order dry storage and produce walk‑in par items. Follow all company safety and security policies. Store flammable materials properly. Meet hotel compliance standards and maintain uniform appearance. Maintain confidentiality of proprietary information. At least 2 years of related work experience. Reliable team player willing to learn and adapt to new situations. Able to lift at least 50 lbs. Proficient in verbal and written English communication. Able to stand for long periods. Food handling certification (can be obtained during employment). Will work varying schedules, including holidays. About You Passionate about food, previous similar work experience, basic knowledge of culinary operations, a team player, hard worker, detail oriented, flexible and willing to meet the demands of a 24‑hour operation.
