Job Summary:
The Senior Manager, Culinary & Operations provides strategic and operational leadership for Timber Ridge, Summit House, and Labontes , while serving as the culinary subject-matter expert for Keystone Mountain Dining. This role is accountable for the financial and operational performance of assigned locations, including labor, food cost, guest experience, safety, and overall execution.As the culinary leader for Mountain Dining, this position drives culinary standards, menu development, food quality, cost management, innovation, and culinary talent development. The Senior Manager partners with Chefs, General Managers, and the Senior Manager, FOH & Operations to build strong teams, establish consistent systems, and drive operational excellence across Keystone Mountain Dining.

• Starting Wage: $72,873.00 - $98,000 + annual salary

• Responsible for financial performance of daily operations including cost of sales & labor, budget development, and analysis of financial information.
• Driving success of the overall Keystone Mountain Dining mission and taking part in projects which move innovation forward.
• Empower, develop, appraise, and create the best atmosphere for employees to be and do their best, especially leadership development of general managers.
• Accurately conduct and review daily reports and audits.
• Accurately schedule and review staff to budgeted labor.
• Oversee for payroll exceptions, approvals, and labor distribution reports across a number of outlets.
• In conjunction with restaurant leadership team, investigate and resolve guest complaints.
• Know and enforce local, state, and federal regulations for the sale and distribution of alcohol.
• Operate business to established Mountain Dining standards.
• Actively pursues GX (market research) targets and responds to trends.
• Partner with location Chefs and COE to develop, cost, and price menus that achieve budgeted margins and align with Mountain Dining financial goals.
• Develop and execute strategies to achieve Cost of Sales targets through effective pricing, procurement compliance, waste reduction, and product mix management.
• Ensure all purchasing activities comply with company procurement policies and guidelines.
• Ensure consistent adherence to inventory procedures, controls, and standard methodologies, including accurate counts and timely completion of required deadlines.
• Review weekly schedules with Restaurant Chefs based on staffing guides, business forecasts, and labor targets; partner with Managers and Supervisors to adjust staffing throughout the week to meet demand and maximize productivity. 
• Costing/pricing of menus, development of new items, analysis of product and sales, inventory, ordering, working with maintenance dept. on projects and priorities, floor supervision during peak times, and coordination with other departments and central corporate teams to ensure a smooth operation.
• Responsible for hiring, retaining, and training all food service personnel including domestic and international, seasonal and year-round, management and non-management employees.
• Oversee ordering/receiving, cost transfers, variance reports, and inventory control for all food, beverages, supplies, etc.
• Ensure that operation fully supports initiatives with corporate strategic partners by giving outstanding representation to their product.
• Maintain employee roster & housing roster for accuracy through the season in Microsoft Excel to include utilizing conditional formatting, filters and formula writing.
• Tracking of employee trainings/certifications, disciplinary reports, hiring status, payroll acknowledgement forms, etc.
• Assist with F&B new/returning employee orientations and other necessary trainings.

Job Requirements:

• High School Diploma or equivalent
• Minimum 3 years restaurant experience required
• Minimum 5 years supervisory experience required
• Culinary experience a plus
• Experience with purchasing software preferred
• Knowledge of Microsoft Office suite
• English required
• TIPS certification required within 30 days of employment
• Serve Safe Food Protection Manager certification required within 30 days of employment

The expected pay range is $72,873.00 - $98,000 + annual salary. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
