General Manager – BRUTØ (Michelin Star) | Denver, CO

BRUTØ is an 18-seat, Michelin-starred chef’s counter on Denver’s Dairy Block, part of Id Est (The Wolf’s Tailor, Basta, Dry Storage, Hey Kiddo / OK Yeah, Nonesuch / Bar None, SHEEP by The Wolf's Tailor). We are a research-driven restaurant. Guests watch every step of the process up close, from our wood-fired hearth to Studio, our in-house research and development and fermentation lab. Ingredients are sourced regeneratively, preserved, fermented and used as completely as possible.

We are in a new chapter as we introduce Culinary Director Carolina Zubiate, a Peruvian-born chef launching her first full menu. Chef Carolina's cooking brings her heritage together with Bruto’s fermentation work and Colorado’s farms and grains. This is a long-term project. We are looking for a General Manager to be her partner and to lead the dining room, the business and the team through it.

The role

The GM runs the restaurant. You will translate the kitchen’s research into hospitality: how each dish, ferment and story reaches the guest at the counter. You’ll own the business side so the creative work can go further.

• Guest experience: Lead service and hospitality at the counter, so guests feel connected to the people, ingredients and ideas behind every course.
• Partnership with the kitchen: Work closely with Chef Carolina on menu launches, Studio projects, beverage pairings, events and collaborations.
• Team: Hire, train and develop the floor and bar team. Build a culture of curiosity, accountability and care.
• Finances: Own P&L, prime cost, labor and controllable expenses, and partner with Id Est Finance and Operations.
• Beverage and events: Partner with Id Est’s beverage director and Bruto's Bar Manager on the pairing, wine and cocktail programs. Grow events, experiences and private bookings.
• Systems and compliance: Manage Toast, 7shifts, MarginEdge and OpenTable, along with payroll, onboarding, HR documentation, certifications and health inspections.
• Reputation: Respond to reviews, watch ratings, and help tell Bruto’s story to press and the community.

What you bring

• At least 5 years of GM or AGM experience in fine dining or tasting-menu restaurants. Michelin or comparable experience is a strong plus.
• Real interest in food, fermentation, sourcing and sustainability, and enough fluency to talk about them with guests.
• Strong financial skills and comfort running a small, high-touch business by the numbers.
• A leadership style built on teaching, clear standards and generosity.
• Solid wine and beverage knowledge.
• Availability for nights, weekends and holidays. Service runs Tuesday through Sunday.
