PM Line Cook

The PM Line Cook is responsible for executing dinner service with precision, consistency, and urgency while maintaining the exceptional culinary standards established by Chef Michael White. This position plays a critical role in delivering an outstanding guest experience by preparing and plating dishes with accuracy, maintaining a clean and organized station, and working collaboratively with the culinary team during high-volume service.

Essential Responsibilities

• Execute menu items according to Chef Michael White's recipes, cooking techniques, and presentation standards.
• Maintain speed, consistency, and attention to detail during dinner service.
• Ensure every plate leaving the kitchen meets MIKA's quality and presentation expectations.
• Monitor cooking times and coordinate with other stations to ensure timely service.

• Complete all assigned mise en place prior to service.
• Set up and stock the assigned station with all necessary ingredients and equipment.
• Continuously replenish products during service.
• Properly label, date, rotate, and store food using FIFO (First In, First Out) procedures.
• Assist with production and prep as directed by kitchen leadership.

• Maintain the highest standards of cleanliness and organization throughout the shift.
• Follow all HACCP guidelines and local health department regulations.
• Monitor food temperatures and proper storage procedures.
• Practice safe operation of all kitchen equipment.
• Complete opening, closing, and deep-cleaning responsibilities for assigned station.

• Communicate effectively with chefs and fellow cooks during service.
• Support other stations as business needs require.
• Accept coaching and feedback with professionalism.
• Contribute to a respectful, positive, and team-oriented kitchen culture.

• Inspect ingredients for freshness and quality before use.
• Minimize food waste while maintaining proper portion control.
• Maintain consistency in flavor, texture, and presentation.
• Demonstrate pride, professionalism, and attention to detail in every dish prepared.

Qualifications

• Minimum of 2 years of experience as a line cook, preferably in an upscale or fine dining restaurant.
• Experience working with seafood, fresh pasta, wood-fired cooking, or Mediterranean cuisine is preferred.
• Strong understanding of classical cooking techniques and knife skills.
• Ability to work efficiently under pressure in a fast-paced environment.
• Knowledge of food safety and sanitation standards.
• Strong organizational skills and attention to detail.
• Reliable attendance and flexibility with scheduling.

Physical Requirements

• Ability to stand and walk for extended periods.
• Lift and carry up to 50 pounds.
• Bend, reach, kneel, and work safely in a busy kitchen environment.
• Work around hot surfaces, open flames, steam, and commercial kitchen equipment.
• Maintain stamina and focus throughout extended dinner service.

Schedule Expectations

• Evening shifts, including weekends, holidays, and special events.
• Availability to work until completion of dinner service and closing duties.
• Flexibility to assist with prep production before service as business demands.
