Pay: $22-$24 per hour Job Type: Full-time Schedule: Wednesday-Sunday Hours: 3am-11am

K Bakery is seeking an Artisan Baker to join our early-morning baking team in the beautiful Palisades Village. This position is best suited for someone with professional bakery experience who can contribute immediately, follow established recipes and production sheets, and complete assigned bread and pastry work with limited supervision.

The ideal candidate is dependable, organized, comfortable working at a steady production pace, and committed to producing consistent, beautifully presented products.

Responsibilities

• Bake off bakery production daily
• Read recipes and daily production sheets and organize tasks to meet baking and service deadlines.
• Accurately scale ingredients using grams and kilograms.
• Prepare and label ingredients and mise en place.
• Perform bread and pastry production tasks, including mixing, dividing, portioning, shaping, panning, filling, egg washing, proofing, baking, cooling, finishing, and packaging.
• Monitor dough and product condition, including temperature, consistency, fermentation, proofing, color, texture, and doneness.
• Safely operate commercial bakery equipment, including mixers, ovens, proofers, scales, racks, and bakery hand tools.
• Maintain consistent portions, yields, appearance, and product quality.
• Label, date, rotate, store, and stage ingredients and finished products using FIFO procedures.
• Follow all food-safety, sanitation, allergen, and cross-contact procedures.
• Complete production, temperature, yield, and waste records accurately.
• Communicate ingredient shortages, production delays, quality concerns, errors, and equipment problems promptly.
• Clean and sanitize workstations and equipment throughout the shift.
• Support both bread and pastry production as needed.
• Assist with training less-experienced team members when assigned.

Required Qualifications

• At least two years of hands-on production experience in a professional bakery or comparable commercial kitchen.
• Ability to follow formulas and accurately scale ingredients by weight.
• Working knowledge of fermentation, proofing, baking temperatures, cooling, storage, and product-quality standards.
• Experience using commercial mixers, ovens, proofers, scales, racks, and standard bakery tools.
• Ability to manage several production tasks and work efficiently with limited supervision.
• Strong attention to detail and commitment to consistency.
• Reliable transportation and dependable attendance for a 3:00 a.m. start time.
• Current food-handler certification or ability to obtain one within the required timeframe.
• Professional communication skills and the ability to work cooperatively as part of an English speaking production team.

Preferred Experience

• Artisan baking including cookies, muffins, cakes, tea breads, pies
• Laminated dough and pastry production experience a plus
• High-volume bakery production
• Attention to detail required

Physical Requirements

• Ability to stand and move throughout the shift.
• Ability to bend, reach, push, pull, and perform repetitive hand and arm movements.
• Ability to safely lift and carry ingredients, trays, and bakery equipment, with assistance when required.
• Ability to work around flour and other food allergens, heat, cold, moisture, sharp tools, and commercial bakery equipment.
