Line Cook (Grill & Sauté)

Saltgrass & Sage Kitchen is hiring Line Cooks for the grill and sauté stations at our restaurant in Nashville, TN. We cook modern Southern food from scratch: whole-animal butchery, house-made pickles and sauces, and a menu that changes with what local farms bring in. On a Saturday we do about 250 covers, and the kitchen is busy but calm. What you will do:

Work grill or sauté during dinner service, cooking every plate to spec and on time
Set up your station each afternoon: prep, sauces, mise en place and par levels
Butcher and portion proteins with the sous chef
Taste everything and flag anything that isn't right before it goes out
Keep your station clean, labeled and up to health code, and help with the nightly breakdown

About you:

At least one year on the line in a full-service restaurant
Solid knife skills and comfortable working a hot station on a busy night
A Tennessee food handler card, or able to get one in your first two weeks (we pay for it)
Reliable, a good teammate and happy to take feedback

$18 to $21 per hour, plus a share of the kitchen tip pool (about $3 to $4 per hour extra on average)
