Vacanza Romana is seeking an experienced and motivated Chef de Partie to join our culinary team. This position is ideal for a skilled cook who takes pride in their craft, thrives in a fast-paced kitchen, and is ready to take ownership of their station while supporting the overall success of the kitchen.

As a Chef de Partie, you will be responsible for preparing and executing menu items to Vacanza Romana’s standards while maintaining consistency, organization, cleanliness, and food safety throughout each service.

Responsibilities

• Manage and maintain an assigned kitchen station throughout service.
• Prepare, cook, and plate menu items according to established recipes, specifications, and presentation standards.
• Complete daily mise en place and ensure the station is fully prepared before service.
• Maintain consistent food quality, portioning, seasoning, and presentation.
• Communicate effectively with the Chef, Sous Chef, and other members of the culinary team.
• Assist with receiving, storing, labeling, rotating, and properly handling food products.
• Follow FIFO procedures and help minimize food waste.
• Maintain a clean, organized, and sanitary workstation throughout the shift.
• Follow all food safety, sanitation, and company procedures.
• Monitor product levels and communicate prep or inventory needs to kitchen leadership.
• Assist with opening and closing kitchen duties.
• Support and guide less-experienced kitchen team members when needed.
• Work collaboratively with the culinary and front-of-house teams to ensure timely and accurate service.
• Maintain composure, organization, and attention to detail during high-volume service.
• Perform additional kitchen duties as assigned by management.

Qualifications

• Previous experience as a Chef de Partie, Line Cook, or similar culinary position preferred.
• Experience in an upscale, high-volume, or Italian-inspired restaurant environment is a plus.
• Strong knife skills and knowledge of professional cooking techniques.
• Ability to follow recipes and execute dishes consistently.
• Strong understanding of food safety and sanitation practices.
• Ability to work efficiently and maintain quality under pressure.
• Dependable, punctual, and team-oriented.
• Ability to stand for extended periods and safely lift and carry kitchen supplies and equipment.
• Valid California Food Handler Card or ability to obtain one as required.

Availability

Vacanza Romana is a dinner-focused restaurant. Candidates must have evening availability , with Friday and Saturday availability required . Weekend and holiday availability may also be required based on business needs.
