Dining Room Manager Education and/or Experience
- Associate degree or higher; five years of related experience and/or training.
- Two years of experience in managing catering operations.
- Extensive knowledge of the private club industry's food and beverage operations
- Sommelier I
- Bartender experience a plus.
- Outstanding oral, written, and listening communication skills.
- A strong degree of adaptability and flexibility
- A track record of increased management growth and development.
- A history of continued professional development
- Pronounced interpersonal skills and an ability to maintain a focused, affable attitude working in a collaborative environment with other staff and club members
- A team player who can work well and interact effectively with many people both inside and outside of The Summit
- Schedules personnel and plans dining room set-up based upon anticipated member/guest counts and client needs
- Takes reservations and checks table reservation schedules
- Greets and seats members and guests
- Carefully supervises dining room staff to help assure proper service; provides beverage service
- Assists in service and tableside cookery as needed and takes orders when necessary during high-volume times
- Inspects dining room employees to ensure that they are in proper and clean uniforms at all times
- Hires, trains, supervises, and evaluates dining room staff
- Provides appropriate reports concerning employee hours, schedules, pay rates, job changes, tip pools, etc.
- Receives and resolves complaints concerning food, beverages, and service
- Serves as liaison between the dining room and kitchen staff
- Assures that all side work is accomplished and that all cleaning of equipment and storage areas is completed according to schedule
- Directs pre-meal meetings with dining room personnel. Relays information and policy changes and briefs personnel
- Assures the correct appearance, cleanliness and safety of dining room areas, equipment and fixtures. Checks the maintenance of all equipment in the dining room and reports deficiencies and maintenance concerns
- Makes suggestions about improvements in dining room service procedures and layout
- Assures that the dining room and other club areas are secure at the end of the business day
- Maintains an inventory of dining room items including silverware, coffee pots, water pitchers, salt and pepper holders, sugar bowls and linen and ensures that they are properly stored and accounted for
- Monitors dining room labor and supplies budget; adjusts as necessary to achieve financial goals
- Develops with other managers and continually updates and refines any policy and procedure manuals for service staff to increase quality and to control costs
- Attends scheduled EOS, pre-shift, and staff meetings
- Conducts business and personal dealings with impeccable ethical and moral standards
- Other duties as assigned
- Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch, and twist or reach.
- Push, pull, or lift to 30 pounds.
- Continuous repetitive motions.
- Work in a hot, humid, and noisy environment.
- The employee may encounter human bloodborne pathogens or potential contamination in the work environment.
- Proper protective equipment and protocol should be used.
- Gloves, face masks, and eye protection must be worn where necessary.
