Roka Akor, Chicago's premier contemporary Japanese steakhouse, is seeking an experienced and passionate Hot Line Cook to join our culinary team.

Known for our exceptional cuisine, premium ingredients, and signature robata-grilled dishes, Roka Akor delivers an elevated dining experience where precision, consistency, and attention to detail are essential.

We are looking for a skilled culinary professional who thrives in a fast-paced, high-volume kitchen and takes pride in producing exceptional food.

Key Responsibilities

• Execute menu items with precision, consistency, and attention to presentation.
• Prepare and cook dishes across hot-line stations, including grilling, sautéing, and other cooking techniques.
• Maintain exceptional standards of food quality, preparation, and presentation.
• Ensure proper mise en place and station readiness before each service.
• Follow established recipes, portioning standards, and culinary procedures.
• Maintain a clean, organized, and sanitary workstation.
• Work collaboratively with the Executive Chef, Sous Chefs, and culinary team to ensure seamless service.
• Adhere to all food safety, sanitation, and temperature-control standards.

Qualifications

• Minimum 2 years of professional cooking experience , preferably in a high-volume, upscale restaurant.
• Strong knowledge of grilling, sautéing, and hot-line cooking techniques.
• Experience with Japanese cuisine or robata grilling is highly desirable but not required.
• Ability to work efficiently and maintain composure under pressure.
• Excellent organizational skills and attention to detail.
• Strong work ethic, reliability, and a team-oriented attitude.
• Availability to work evenings, weekends, and holidays.
