A vibrant, design-forward Japanese dining concept in Louisville's NuLu neighborhood, this restaurant blends traditional culinary techniques with modern creativity to deliver an energetic and immersive guest experience centered around high-quality ingredients and bold flavors. We are seeking a Sushi Chef to lead the sushi program and support full back-of-house operations. The Sushi Chef is responsible for leading the sushi program and supporting kitchen operations, ensuring exceptional food quality, strong team collaboration, and consistent execution. This role requires a polished, hands-on leader who thrives in a fast-paced, high-expectation, dinner-only environment. We are a hospitality-driven organization focused on delivering exceptional guest experiences through culinary excellence, strong culture, and operational discipline. We're seeking a confident and experienced culinary professional who can inspire a team, partner effectively with FOH leadership, and execute at a high level. This role is ideal for someone who brings both structure and creativity to a performance-driven kitchen. You will play a key role in maintaining high standards, supporting the BOH team, and elevating the overall dining experience. - Work closely with FOH leadership to ensure seamless service
- Maintain high standards of food quality, presentation, and consistency
- Support ordering, inventory, and food cost controls
- Train and mentor team members within the sushi program
- Execute dinner-only service Tuesday - Saturday (closed Sunday & Monday)
- Proven experience as a Sushi Chef or similar role
- Strong sushi fundamentals required (knife skills, fish butchery, rice preparation, and traditional techniques)
- Strong technical sushi skills and attention to detail
- Ability to work collaboratively within a team environment
- Solid understanding of kitchen operations
- Ability to thrive in a high-volume, upscale dining environment
- Passion for Japanese cuisine and guest experience
- Excellent communication and organizational skills
