Cold Station Cook (Garde Manger)

As a Cold Station Cook (Garde Manger) for Traditions Hospitality Group, you'll be an essential part of our culinary team, responsible for the preparation, organization, and presentation of cold menu items, salads, dressings, garnishes, and chilled components. Your attention to freshness, consistency, and presentation will help ensure every dish meets THG's quality standards and creates an exceptional dining experience for our guests.

Essential Functions and Responsibilities:

• Prepare cold menu items, including salads, antipasti, bruschetta, charcuterie, cold seafood, dressings, garnishes, and other chilled components.
• Ensure proper portioning, seasoning, and plating according to THG recipes and presentation standards.
• Maintain station setup throughout service, ensuring products remain fresh, properly stocked, and organized while minimizing waste.
• Maintain consistency in the taste, texture, quality, and presentation of all prepared items.
• Properly rotate, label, store, and handle ingredients in accordance with food safety standards.
• Maintain cleanliness and organization of work areas, equipment, storage areas, and side stations.
• Support line cooks by preparing garnishes, ingredients, and other components needed for service.
• Prepare, finish, and plate select desserts, including chilled desserts, fruit components, sauces, and garnishes.
• Assist with training team members on cold food preparation, plating, and presentation techniques.
• Inspect food preparation and service areas to ensure safe and sanitary food-handling practices.
• Complete assigned cleaning and sanitation tasks throughout the shift.
• Follow all THG food safety, sanitation, safety, uniform, and operational standards.
• Identify and communicate opportunities to improve service, performance, quality, or safety.
• Perform other duties as requested or assigned by management.

Required Qualifications:

• Must be at least 18 years old.
• Must be able to obtain a Gaming License (if applicable).
• Minimum of one year of kitchen experience, preferably in a fine-dining or high-volume restaurant.
• Strong knife skills and understanding of cold food preparation, presentation, and plate composition.
• Ability to maintain quality, consistency, and pace during peak service periods.
• Strong organizational skills and attention to detail.
• Ability to read and understand written recipes, instructions, and procedures.
• Ability to work collaboratively and professionally as part of a team.
• Flexible schedule, including evenings, weekends, and holidays.

Working Conditions and Physical Effort:

• Stand and work in a fast-paced kitchen environment for extended periods.
• Frequently reach, bend, stoop, lift, carry, and push while performing job duties.
• Lift and carry food products, supplies, equipment, and cases weighing up to 50 pounds.
• Work with kitchen equipment and tools requiring hand-eye coordination and safe handling.
• Work in areas with exposure to varying temperatures, including refrigerated and kitchen environments.
• Moderate to high noise levels.
• May be exposed to cigarette smoke while on property.
• Moderate physical effort is required.
