Fish 101 is opening our new Carlsbad location, and we're looking for experienced, energetic Bartenders and Lead Bartenders who thrive in a busy, fast-paced restaurant environment.

We're a locally owned North County seafood restaurant known for fresh food, genuine hospitality, and our laid-back coastal atmosphere.

Our new Carlsbad restaurant will feature a full bar with a strong focus on craft cocktails, tequila, mezcal, local beers, and wine, along with full-menu dining service at the bar .

We expect a high-volume restaurant with a busy cocktail program. Our bartenders will be responsible for both preparing drinks for the restaurant and providing excellent food and beverage service to guests dining at the bar.

We're looking for bartenders who are equally comfortable behind the bar and taking care of guests — people who can handle a rush, multitask, move with urgency, and deliver genuine hospitality without missing a beat.

What We're Looking For

• Experienced bartenders with strong full-service restaurant experience.
• Ability to manage bar guests ordering full meals while simultaneously preparing cocktails for the restaurant.
• Experience working in high-volume restaurants with busy service bars.
• Strong knowledge of classic cocktails, spirits, beer, and wine.
• Tequila, mezcal, and craft cocktail experience is a plus.
• Excellent multitasking, time management, and communication skills.
• Ability to work quickly and efficiently while maintaining accuracy and attention to detail.
• Friendly, outgoing personalities who enjoy building relationships with guests.
• Team players who stay calm, organized, and positive during busy service periods.
• Reliable availability for lunch, dinner, weekends, and the upcoming holiday season.

Holiday availability is important. We expect a busy holiday season and need team members available for scheduled shifts. Fish 101 is closed on Thanksgiving Day and Christmas Day.

Bartender Responsibilities

Full-Service Bar Dining

• Greet guests, explain menu items, and provide friendly, attentive service.
• Take food and beverage orders accurately and efficiently.
• Guide guests through our seafood menu, daily specials, and cocktail offerings.
• Manage multiple bar guests and dining parties throughout their meals.
• Monitor food timing, deliver orders, check back with guests, and process payments.
• Maintain a welcoming atmosphere and build relationships with regulars.

High-Volume Cocktail Service

• Prepare high volumes of cocktails, beer, and wine with speed and consistency.
• Manage drink tickets while simultaneously serving guests seated at the bar.
• Maintain cocktail recipes, proper pours, presentation, and quality standards.
• Anticipate rushes and stay ahead on preparation, stocking, and organization.
• Keep the bar clean, stocked, and ready for service.
• Work closely with servers, runners, and kitchen staff to ensure efficient service.

Lead Bartender – Additional Responsibilities

We're also hiring experienced Lead Bartenders to help establish and maintain a successful, high-volume bar operation.

• Lead by example during busy lunch and dinner shifts.
• Help organize workflow between cocktail production and bar dining service.
• Maintain consistent drink quality, speed, and hospitality standards.
• Assist with training, mentoring, and supporting fellow bartenders.
• Help establish opening, closing, stocking, and preparation procedures.
• Assist with inventory management, ordering, and liquor cost controls.
• Collaborate with management on cocktail development and seasonal specials.
• Create a positive, organized, team-oriented bar environment.

Qualifications

• Minimum 2 years of bartending experience preferred.
• High-volume, full-service restaurant experience strongly preferred.
• Strong cocktail knowledge and excellent food service skills.
• Experience handling multiple food orders and drink tickets simultaneously.
• Leadership experience preferred for Lead Bartender candidates.
• Must be at least 21 years old.
• California Responsible Beverage Service certification and Food Handler Card, as applicable.
• Availability for lunch, dinner, weekends, and busy holiday periods.
