- Plan and direct the functions ofadministration and planning of the Food & Beverage department to meet thedaily needs of the operation.
- Clearly describe, assign, and delegateresponsibility and authority for the operation of the various food and beveragesub departments such as room service, restaurants, banquets, kitchens,stewards, etc.
- Monitor and when necessary, developand implement schedules for the operation of all restaurants and bars toachieve a profitable result.
- Participate with the chef andrestaurant managers in the creation and merchandising of appealing menu designsto attract a predetermined guest market.
- Implement effective controls of food,beverage, and labor costs among all sub departments. Monitor the food and beverage budget toensure efficient operations and guarantee expenditures stay within budgetlimitations, including achieving budgeted revenue and labor expenses.
- Assist the departmental managers inestablishing and achieving predetermined profit objectives and desiredstandards of quality food, service, cleanliness, merchandising and promotions.Maximize food and beverage department profitability.
- Regularly review and evaluate thedegree of guest satisfaction of the individual outlets, including banquetservice, to recommend new operating and marketing policies whenever a change indemand, guest dissatisfaction, or change in competitive environment requiresadjustments.
- Investigate and resolve food qualityand service complaints.
- Develop along with assistance fromdepartment heads, operating tools necessary and incidental to modern managementprinciples such as budgeting, forecasting, purchase specifications, recipes,portion specifications, menu abstracts, food production control, jobdescriptions, etc.
- Ensure compliance with all MissoulaEdgewater policies and procedures that relate to food and beverage, as well aslocal, state, and federal laws and regulations
- Hire, train, supervise, develop,discipline, and counsel all food and beverage management employees according toMissoula Edgewater policies and procedures.
- Participate in the development of theannual budget, develop short and long term financial operating plans.
- Attend mandatory meetings includingdivisional meetings, executive meetings, staff meetings, etc.
- Participate in Manager on Dutycoverage program, which may require occasional weekend stayovers.
- Participate in community publicrelations for the hotel.
- Proficiency in the use and operation of computer systems includingWord, Excel, PowerPoint, Access, Outlook, and other relevant programs.
- Perform general cleaning tasks toadhere to health and safety standards.
- Perform in the capacity of anyposition supervised.
- Keep work area clean and organized.
- Complete other duties as assigned bysupervisor.
- Demonstrate positive leadershipcharacteristics which inspire employees to meet and exceed standards.
- Demonstratesthe ability to perform effectively in high-stress environments, adapts quicklyto unexpected changes, and manages demanding workloads while maintainingcomposure, focus, and professionalism.
- Inaddition to performance of the essential functions, this position may berequired to perform a combination of the following supportive functions, withthe percentage of time performing each function to be solely determined by the supervisorbased upon the requirements of the company.
- Performother duties and responsibilities as assigned or required.
- Assimilateinto the Averill Hospitality CORE culture through understanding, supporting,and participating in all elements of CORE. Demonstrate working knowledge of the service standards
- Regular attendance and conformancewith the standards established by Averill Hospitality is essential to thesuccessful performance of this position.
- Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect business needs of the restaurant/hotel.
- High School diploma or equivalent required.
- 4 year collegedegree preferred.
- 10 years of experience in food and beverage, with at least 3 ofthose years management level.
- Food Service Sanitation.
- Alcohol Service Permit (if state required).
- CPR Certification and/or First Aid Training preferred.
