Job Summary Under general supervision, prepares and cooks meals for clients and follows kitchen cleaning schedule by performing the following duties. Job Description All candidates conditionally offered transfer, promotion or initial hiring into a DOT/safety‑sensitive position shall submit to testing for drugs and alcohol and test negative before performing any job functions that are safety-sensitive or require a CDL. ESSENTIAL JOB FUNCTIONS Review Shelter census and estimate and prepare quantities of food as needed. Refer to menu and instructions, and select meats, fish, fowl and vegetables from storage. Baste, sear, batter, cut, portion and season according to recipes, menu instructions, or personal judgment. Cook meat and vegetables, using ovens, griddles, and other utensils. Apportion and serve food from steam table. Clean and wash work areas and equipment using proper cleaning agents and equipment. Follow kitchen cleaning schedule and maintain a clean kitchen. Sweep and mop kitchen floors and around serving line, and clean and wash kitchen equipment such as bread slicer, mixer, dishwasher, serving line, tray belts, etc. Clean and wash tables, sinks, walk‑in refrigerators, pass‑through refrigerator, warmer, ovens, fryolator, grill and shelving. Keep kitchen area and shelves free of clutter. Clean cook’s office, freezer room and the contents within. Perform other duties as assigned. REQUIRED SKILLS, KNOWLEDGE AND ABILITIES Skill in estimating food requirements; and in preparing and cooking foods to present an attractive appearance and pleasant flavor. Knowledge of institutional food preparation and cooking; of cutting meat; and of proper food storage practices. Ability to understand and follow oral and written instructions; to deal tactfully with others; to apply sensory perception in judging flavor and readiness of foods by smell, taste or appearance; to meet meal schedules; to work varied shifts; to understand and follow departmental policies and procedures. SUPERVISORY RESPONSIBILITIES This job has no supervisory responsibilities. QUALIFICATIONS To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. EDUCATION and/or EXPERIENCE Demonstrated ability to read and write, and one year of satisfactory, full‑time paid employment in institutional cooking. LANGUAGE SKILLS Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one‑on‑one and small group situations to customers, clients, and other employees of the organization. MATHEMATICAL SKILLS Ability to add and subtract two‑digit numbers and to multiply and divide with tens and hundreds. Ability to perform these operations using units of American money and weight measurement, volume, and distance. REASONING ABILITY Ability to apply common sense understanding to carry out simple one‑ or two‑step instructions. Ability to deal with standardized situations with only occasional or no variables. CERTIFICATES, LICENSES, REGISTRATIONS Current Food Handler’s Card from Tulsa City/County Health Department. PHYSICAL DEMANDS While performing the duties of this job, the employee is regularly required to stand; walk; use hands and fingers, to handle, or feel; and reach with hands and arms. The employee frequently is required to talk or hear and taste or smell. The employee is occasionally required to sit; climb or balance; and stoop, kneel, crouch, or crawl. The employee must frequently lift and/or move up to 10 pounds and occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, color vision, peripheral vision, depth perception, and ability to adjust focus. WORK ENVIRONMENT While performing the duties of this job, the employee is frequently exposed to toxic or caustic chemicals, or airborne particles and extreme heat. The employee is occasionally exposed to wet and/or humid conditions, moving mechanical parts, fumes, blood‑borne and airborne pathogen, outside weather conditions, extreme cold, risk of electrical shock, risk of radiation, and vibration. The employee could be exposed to head lice, scabies, hepatitis, HIV‑AIDS, or tuberculosis. The noise level in the work environment is usually moderate.
