Prep Cook - BOH

We're looking for a Prep Cook who is organized, dependable, and detail-oriented.

You're someone who takes pride in setting the kitchen up for a great service. You thrive in a fast-paced kitchen and can work efficiently from prep lists while following recipes, portion standards, and food safety rules.

You're comfortable working behind the scenes with line cooks, sushi chefs, and kitchen leadership to make sure every station has what it needs. You enjoy staying busy, working with your hands, and seeing your work come together during a rush.

What You'll Do

• Prepare ingredients according to daily prep lists, company recipes, and portion standards, including washing, cutting, and portioning produce and proteins and making sauces and dressings.
• Use knives and kitchen equipment safely and correctly.
• Properly label, date, store, and rotate all prepped items following FIFO procedures.
• Monitor and record food temperatures and storage conditions as required.
• Maintain a clean, organized, and sanitary prep area in compliance with health department regulations and company policies.
• Receive, check, and put away deliveries accurately and promptly.
• Restock stations, walk-ins, and dry storage so the kitchen is ready for service.
• Communicate shortages, quality concerns, or equipment issues to kitchen leadership right away.
• Support the line during peak service periods when needed.
• Complete opening and closing duties as assigned.
• Follow all safety standards, including knife safety, proper chemical handling, and PPE use.

Compensation: $18.25 per hour.

Requirements

What You Bring

• Previous kitchen or food prep experience preferred; we're willing to train the right candidate.
• Basic knife skills and the ability to follow recipes and prep lists accurately.
• Understanding of food safety, sanitation, and FIFO procedures, or willingness to learn.
• Strong time-management skills and attention to detail.
• Reliable attendance and a positive, team-oriented mindset.
• Washington State Food Worker Card required, or must be obtained within 14 days of beginning work.

The Physical Stuff

• Kitchen-based work environment.
• Ability to stand and walk for extended periods.
• Ability to perform repetitive chopping, cutting, lifting, and reaching motions.
• Ability to lift and carry up to 30 pounds frequently (cases of produce, containers, supplies).
• Exposure to walk-in coolers and freezers, hot surfaces, sharp tools, cleaning chemicals, wet surfaces, and moderate-to-high noise levels.
• Use of required PPE, including non-slip footwear.
• Ability to work early mornings, weekends, holidays, and variable shifts based on business needs.
• Ability to perform the essential functions of the position, with or without reasonable accommodation.
