Position Amaya Cook II at Fairmont Grand Del Mar, San Diego, California. Rate of Pay $24.88 per hour (USD). Key Responsibilities Produce all hot and cold food items for restaurant and catering service, ensuring compliance with Fairmont Grand Del Mar and Forbes standards. Date all food containers and rotate per Standard Operating Procedures (SOP). Practice safety and sanitation standards at all times, ensuring perishables are kept at proper temperatures. Cook orders as requested, including special requests. Start food items that are prepared ahead of time, avoiding over preparation. Properly portion all items on the assigned station. Control food waste, loss, and usage per SOP; assist in planning and actions to address food cost issues. Check pars for shift use, determining necessary preparation, freezer pull, and line setup. Note out‑of‑stock items or possible shortages; assist in keeping buffet stocked. Assist in prep work of vegetables and condiments as required for the next shift. Return unused food items to designated storage areas, covering and dating all perishables. Execute all reasonable requests by management within capabilities. Qualifications Effective verbal communication with guests and co‑workers. Capability to perform physical tasks such as pushing, pulling, bending, stooping, and lifting. Ability to read and interpret a BEO (Banquet Event Order). Experience on carving, pasta, omelet, and stir‑fry stations. Ability to work all banquet functions. Proficiency in cutting, trimming, and boning meat prior to cooking. Skill in washing, peeling, cutting, and shredding fruits and vegetables for preparation. Positive relationship building with other departments. Ability to bake, broil, sauté, and steam meats, fish, vegetables, and other foods. Ability to measure and mix ingredients according to recipes.
