The Warbler Hotel - Barback Role Details Department: Food & Beverage Reports To: Bar Lead/ FOH Manager FLSA/Status: Hourly non-exempt; tipped and tip-pool-eligible status to be determined by the property Outlets: Fine-dining Spanish restaurant and upstairs pool bar Position Summary The Barback is the operational foundation of The Warbler's beverage program. Working behind a Spanish restaurant bar with sherry, vermouth, and adventurous wine, and at an upstairs pool bar built for seasonal cocktail service, this role keeps each bartender prepared, clean, and composed. The Barback is expected to see needs before they become interruptions and to handle products-especially glassware, ice, wine, and spirits-with disciplined care. Key Responsibilities Open and stock both bars to par, including spirits, modifiers, mixers, citrus, herbs, syrups, garnishes, napkins, straws, menus, bar tools, and approved non-alcoholic options. Produce and transport clear, cubed, crushed, and specialty ice safely; maintain ice wells, bins, and scoops in sanitary condition. Polish, inspect, rack, and stage stemware, rocks glasses, highballs, sherry copitas, flutes, and pool-appropriate serviceware free of water spots, chips, and fingerprints. Receive beverage deliveries, verify quantities and condition, label and rotate product, and organize backstock by the established FIFO and security protocols. Assist with wine cellar organization, bottle dusting, inventory counts, restocking, and transfer logs; handle allocated bottles and rare wine under manager direction. Prepare approved bar mise en place, including juice, dehydrated garnishes, herb bundles, salt rims, batch components, and pool-bar fruit preparation, while respecting recipe and dating standards. Replenish the Spanish restaurant's sherry, vermouth, aperitif, and wine-by-the-glass backups without disrupting service or exposing labels to excessive heat or light. Clear bar wells, remove empties, break down cardboard, separate glass for recycling, remove recycling, and keep service corridors safe and uncluttered. Run clean glassware, retrieve emergency items, and support bartenders during rushes without entering production steps beyond training and authorization. Monitor pool-bar weather changes, wind exposure, glass restrictions, and guest-area safety; replace compromised serviceware promptly. Complete closing breakdown, chemical-safe cleaning, refrigeration checks, par sheets, and concise shift handoff notes. Guest Experience & Service Standards Move through guest areas quietly and purposefully; never stack dirty glassware, carry overflowing bins, or conduct operational conversations where guests are dining. Maintain impeccable grooming and a clean uniform despite physically demanding work; visible preparation areas must look intentional at all times. Respond to bartender and manager cues promptly, preserving the bartender's ability to maintain eye contact and conversation with guests. Protect the integrity of premium spirits and allocated wine through careful handling, precise counts, and discretion. Offer a brief, gracious acknowledgment if engaged by a guest, then connect the guest with the bartender or server for a complete response. Qualifications & Experience Required High school diploma or equivalent. Six months of barback, food running, restaurant support, warehouse, or comparable high-volume service experience. Ability to lift heavy beverage goods safely and work accurately during busy service. Basic understanding of sanitation, rotation, and safe glass handling. Preferred Experience in a cocktail bar, fine-dining restaurant, luxury hotel, pool or rooftop venue. Familiarity with wine storage, cocktail mise en place, or Spanish aperitif culture. Food-handler and responsible alcohol-service credentials. Knowledge & Skills Safe ice handling, glassware care, bar setup, FIFO rotation, and cleaning-chemical procedures. Foundational awareness of sherry, vermouth, cava, still wine, beer, and cocktail ingredients, including why storage temperature and bottle condition matter. Ability to read pars, recipes, purchase labels, and inventory sheets; dependable communication with bar and stewarding teams. Strong spatial awareness on stairs, elevators, rooftop pathways, wet bars, and crowded service corridors. Physical Requirements Lift and carry up to 50 pounds regularly; move kegs and cases up to [weight per policy] using approved equipment and team-lift procedures. Stand, walk, bend, reach, crouch, and climb stairs for up to 8-10 hours. Work in heat, sun, wind, rain, cold storage, wet floors, noise, and around broken-glass hazards and cleaning chemicals. Schedule & Availability Evening, late-night, weekend, holiday, and seasonal availability is required. Pool-bar shifts may begin before guest service for setup and may change with weather, private events, and occupancy. Compensation & Benefits Compensation: $12.00 to $15.00 per hour, plus tip-pool participation where applicable.
