PERFORMANCE EXECUTIVE CHEF - Charlotte Hornets - NC

High-Performance Executive Chef Job Summary The High-Performance Executive Chef will improve player health and performance through the creation of nutritionally optimal meals and snacks for the players and coaches. The chef will oversee the culinary performance staff and work with a multi-disciplinary team to provide fresh, local, balanced, and nutrient-dense meals tailored to the needs of the players and coaches. Responsibilities Develop recipes, source, build and implement menus for all player, coach and staff meals and ownership needs, with a focus on nutrient-dense foods to optimize health and performance. Lead culinary staff, including hiring and termination of personnel, scheduling and reviewing hours, conducting regular performance reviews, and, if vital, terminating staff in conjunction with human resources. Assist in establishing a culinary budget, including menu costing, inventory tracking and invoice processing. Implement procedures for serving food and rotating, storing, and disposing of food within coolers, freezers, dry storage, etc., applying a FIFO approach and ensuring food safety and organizational standards. Establish relationships with quality, nutritional-minded vendors to procure seasonal, local and sustainable ingredients. Synchronize and prepare lunches for the business and administration sector of the organization around the needs of player and coach meals during the off‑season. Athlete‑Centered Approach Knowledge of nutrition needs and demands of an athlete. Collaborate with team dietitians as a multi-disciplinary member of the performance nutrition department and advise on culinary methods and techniques for meals related to the athletes’ needs. Skills & Abilities Comprehensive understanding of menu item specifics including dietary restrictions, food allergies and intolerances, ingredients, preparation processes, holding and serving temperatures, and HACCP guidelines. Experience & Education Minimum of 1–3 years culinary management experience within an athletic nutrition setting (e.g., professional sports team, collegiate athletic department, Olympic team setting). Preferred. Bachelor’s degree in culinary arts, nutrition, food science and/or related field is a plus.
