Pastry Sous Chef

Aubergine, a distinguished two-Michelin-star restaurant in Carmel-by-the-Sea , is seeking a talented and motivated Pastry Chef Sous Chef  to join our pastry team. This position is ideal for a detail-oriented culinary professional who is passionate about refined pastry, desserts, and the pursuit of excellence in a Michelin-starred environment.

Working closely with the Pastry Assistants and the culinary team, the Pastry Chef Sous Chef will assist in the preparation and execution of sophisticated desserts, pastries, breads, components, and plated desserts while maintaining the highest standards of quality, precision, and presentation.

KEY RESPONSIBILITIES

Prepare and execute pastry and dessert components according to established recipes and Aubergine standards.

• Assist with the preparation and execution of daily plated desserts, petits fours, mignardises, breads, pastries, and other pastry preparations.
• Produce consistent, precise work with exceptional attention to detail.
• Accurately measure ingredients and follow recipes, techniques, and production schedules.
• Assist with daily mise en place and ensure all pastry stations are properly stocked and organized.
• Maintain exceptional standards of cleanliness, sanitation, organization, and food safety.
• Work efficiently and calmly in a high-volume, detail-driven professional kitchen.
• Collaborate closely with the Pastry Chef, Sous Chefs, and culinary team to ensure smooth service.
• Assist with developing and refining pastry preparations, garnishes, and dessert components.
• Properly store, label, date, and rotate ingredients and prepared products.
• Monitor product quality and communicate any concerns to the Pastry Chef or Sous Chef.
• Minimize waste through careful preparation, storage, and utilization of ingredients.
• Maintain equipment and workstations in accordance with restaurant standards.
• Follow all health, safety, and restaurant policies.
• Contribute to a positive, professional, respectful, and team-oriented kitchen environment.

QUALIFICATIONS

• Previous professional pastry experience in a fine-dining, luxury hotel, or high-end restaurant environment preferred.
• Strong understanding of fundamental pastry techniques and baking principles.
• Excellent knife skills and attention to detail.
• Ability to follow precise recipes and execute consistently.
• Ability to prioritize and manage multiple tasks in a demanding kitchen environment.
• Strong communication and teamwork skills.
• Passion for pastry, seasonal ingredients, and culinary craftsmanship.
• Willingness to learn and develop within a Michelin-starred culinary team.
• Ability to stand for extended periods and lift up to 50 pounds as needed.
