Position Summary

The Certified Dietary Manager (CDM) is responsible for planning, organizing, directing, and supervising all dietary and food service operations within the skilled nursing facility. The CDM ensures residents receive nutritionally adequate meals that meet physician orders, regulatory requirements, and resident preferences while maintaining compliance with all federal, state, and local regulations, including CMS, Florida Agency for Health Care Administration (AHCA), and Department of Health standards.

Essential Duties and ResponsibilitiesFood Service Operations

• Direct daily operations of the dietary department.

• Ensure meals are prepared and served according to physician-prescribed diets and therapeutic meal plans.

• Oversee food production, tray assembly, meal service, and sanitation practices.

• Develop and maintain standardized recipes and menus.

• Conduct meal rounds and tray audits to ensure resident satisfaction and compliance with diet orders.

Regulatory Compliance

• Maintain compliance with CMS, AHCA, FDA Food Code, and local health department regulations.

• Ensure adherence to infection control, food safety, HACCP, and sanitation standards.

• Prepare for state surveys and regulatory inspections.

• Implement corrective action plans when necessary.

• Maintain required departmental records and documentation.

Resident Nutrition Management

• Collaborate with the Registered Dietitian, nursing staff, physicians, and interdisciplinary team.

• Monitor resident nutritional status, weight trends, and meal intake.

• Participate in care plan meetings and quality assurance activities.

• Assist with nutrition screenings, assessments, and care planning as directed.

• Address resident and family concerns related to dietary services.

Staff Leadership

• Recruit, train, supervise, schedule, and evaluate dietary staff.

• Conduct orientation and ongoing in-service education.

• Monitor staff performance and ensure compliance with facility policies.

• Promote a positive work environment and resident-centered culture.

Budget and Inventory Management

• Manage departmental budget and food costs.

• Order food, supplies, and equipment through approved vendors.

• Conduct inventory and maintain appropriate stock levels.

• Monitor waste reduction and cost-control initiatives.

• Maintain food and labor costs within budgeted guidelines.

Quality Assurance

• Participate in facility Quality Assurance and Performance Improvement (QAPI) activities.

• Monitor resident satisfaction and implement service improvements.

• Conduct departmental audits and inspections.

• Ensure accurate meal counts, production records, and temperature logs are maintained.

QualificationsEducation

• High school diploma or GED required.

• Completion of an approved Dietary Manager training program preferred.

• Associate degree in Nutrition, Food Service Management, Culinary Arts, or related field preferred.

Licensure / Certification

• Current Certified Dietary Manager (CDM, CFPP) credential required or eligible for certification.

• ServSafe Manager Certification preferred.

• Must meet all applicable Florida regulatory requirements.

Experience

• Minimum two (2) years of food service management experience.

• Previous experience in a skilled nursing facility, long-term care facility, or healthcare environment preferred.

• Experience managing dietary staff and budgets preferred.

Knowledge, Skills, and Abilities

• Knowledge of therapeutic diets and nutrition principles.

• Knowledge of CMS, AHCA, and food safety regulations.

• Strong leadership, communication, and organizational skills.

• Ability to manage multiple priorities in a fast-paced healthcare environment.

• Proficiency with dietary software, inventory systems, and Microsoft Office applications.

• Ability to work collaboratively with interdisciplinary healthcare teams.

Physical Requirements

• Ability to stand and walk for extended periods.

• Ability to lift up to 50 pounds.

• Ability to work in kitchen environments with exposure to heat, steam, and cleaning chemicals.

• Ability to bend, reach, stoop, and push food carts as needed.
