About the Timing of This Search

By design, we are beginning this search ahead of an opening. Our current Director of Food & Beverage is considering several General Manager and Chief Operating Officer opportunities and is likely to accept one of them in the coming months. When that day comes, we intend to be ready rather than reacting.

That means the timing here is genuinely undetermined. This is not a position we are filling in the next few weeks, and we will be transparent with candidates about where things stand as the process moves along.

We are starting now because we would rather take the time to find the right leader than move quickly and settle. If you are a strong fit but not in a position to make an immediate move, we still want to hear from you. For the right person, we are prepared to be patient and flexible on timing.

About Serrano Country Club

Serrano Country Club is a member-owned private club in El Dorado Hills, California, roughly 30 minutes east of Sacramento in the Sierra foothills. The Club serves more than 810 member families and offers an 18-hole Robert Trent Jones II championship golf course, a 34,000 square foot clubhouse, tennis, aquatics, fitness, and spa. The culture is refined but genuinely family-friendly, and members use this Club constantly.

In our most recent Member Experience Survey, Serrano maintained its Distinguished Club designation and was elevated from Exceptional to Elite, placing the Club among the top 3 percent of private clubs nationally. Food and Beverage scored 87.3 percent and the Club's Net Promoter Score was plus 58.8 percent, both benchmarked exclusively against other Distinguished Clubs. Serrano has also been recognized by Club + Resort Business among the top culinary experiences in the country and ranked second in California.

The Club is financially healthy and disciplined. Record membership demand over the past two years has allowed us to reinvest more than $1 million annually into facilities, infrastructure, and member experience without assessments or capital calls.

The Operation You Would Lead

This is a fully built, high-volume, multi-venue operation, not a turnaround. Recent annual activity includes:

• Approximately $4 million in annual Food and Beverage revenue
• More than 60,000 member dining covers
• More than 70 Club events hosting over 7,000 attendees
• More than 400 case wine orders fulfilled for members
• More than 1,600 on-course orders delivered through our mobile app and cart GPS system, supporting over 37,000 rounds of golf
• A team of 60 or more employees across all Food and Beverage departments

The department also produces the Claim Jumper Invitational, our flagship four-day member-guest tournament and one of the premier member-guest invitationals on the West Coast. Your Team

You would lead this department through an established management team rather than carrying the floor yourself. Three leadership groups report directly to this position:

• Executive Chef, and the culinary team beneath
• Director of Catering and Events, and the events team beneath
• Food and Beverage Managers

Every member of the Food and Beverage staff flows through one of these leaders. Your work is to develop that leadership group, hold the standard, and give them what they need to succeed.

We will be candid about what makes this role different from most Food and Beverage Director openings.

• The operation is already strong. Your job is to advance it, not rebuild it. The systems, standards, team, and member confidence are in place. That is a very different starting point than most postings offer.
• Food and Beverage is a stated Club priority. Service excellence and consistency in Food and Beverage is a named focus area in our current strategic direction, with Board and management support behind it. This department is not an afterthought here.
• Governance is clear and it is respected. The Board sets policy and strategic direction. Management operates the Club. Committees are advisory. You will not be running a department by committee, and you will be supported when you are upholding adopted standards.
• We develop leaders. The reason we are opening this search is that our current Director is being actively recruited for General Manager and Chief Operating Officer roles. We are proud of that. If your goal is to eventually run a club, this is a place where that path is taken seriously.
• You will be genuinely supported. This position reports to the Director of Operations and works closely with a General Manager who thinks like a Food and Beverage operator. You will have leadership above you that understands the department, knows what it takes to run it well, and will back you when it counts. That is not the case everywhere.
• You will have real financial ownership. Profit and loss accountability for the department, with genuine input into how the plan is built. You will be part of the annual budgeting process alongside the General Manager, the Director of Operations, and the Director of Finance, and you will be accountable for delivering against the plan you helped shape.
• The membership is engaged and the Club is thriving. Sixty thousand covers is not a club where the dining room sits quiet. Members show up, they participate, they have opinions, and member satisfaction is running at the highest levels in the Club's history. Your work will be seen, used, and appreciated every single day.

What You Would Own

This position reports to the Director of Operations and partners daily with the General Manager and Chief Operating Officer, the Executive Chef, and the leadership team across Golf, Racquets, Fitness, and Membership.

• Overall leadership of all Food and Beverage operations, including member dining, banquets and Club events, golf course and on-course service, pool and seasonal outlets, and private events
• Profit and loss accountability for the department, including forecasting, labor management, purchasing strategy, and cost controls, with active participation in the annual budgeting process alongside the General Manager, Director of Operations, and Director of Finance
• Recruiting, training, developing, and leading a team of 60 or more, with a clear focus on service consistency and staff retention
• Setting and reinforcing service standards through daily pre-shift meetings, ongoing training, and visible presence on the floor
• Partnering with the Executive Chef on menu strategy, culinary standards, and cost of goods performance
• Leading beverage and wine program strategy, including inventory discipline, vendor relationships, and member wine programming
• Planning and executing Club events and flagship tournaments in partnership with Golf, Membership, and Communications
• Working collaboratively with the Food and Beverage Committee and presenting to the Board and Finance Committee as requested
• Partnering across departments with Golf, Racquets, Fitness, Membership, and Grounds to deliver one consistent member experience

Maintaining full compliance with health, sanitation, alcohol service, and California labor requirements

What We Are Looking For

• Five or more years of progressive Food and Beverage leadership, ideally including private club experience
• Demonstrated success leading a multi-outlet operation of comparable scale and complexity
• Strong financial acumen, including budgeting, forecasting, labor modeling, and cost of goods management
• A genuine hospitality presence, meaning someone who is visible, knows members by name, and leads from the floor rather than the office
• Proven ability to recruit, develop, and retain staff in a competitive labor market
• Maturity and discretion in a member-facing environment, with the judgment to uphold Club standards while preserving relationships
• ServSafe Manager and responsible alcohol service certification, or the ability to obtain both promptly
• CMAA involvement and a Certified Club Manager credential or interest in pursuing one is a plus

Technology and How We Work

One qualification deserves its own section, because it matters more to us than it does to most clubs.

Serrano is actively investing in technology to take administrative work off our managers and put that time back on the floor with members. That includes club management and point of sale platforms, automated invoice processing, inventory and forecasting tools, and the practical, everyday use of artificial intelligence to work faster and more accurately. We are not experimenting for the sake of it. We are eliminating the spreadsheet hours that keep good hospitality leaders stuck in an office.

The ideal candidate is genuinely tech-forward. Not simply willing to learn a new system, but the kind of leader who looks at a manual process and asks whether it needs to exist at all. Compensation and Benefits

Base salary range of $105,000 to $120,000, commensurate with experience, plus an annual performance bonus.
